Today I'm sharing a fun Minion inspired layered rice salad recipe.
This recipe makes a lovely child-friendly meal that the whole family can enjoy - my boys certainly enjoyed eating their own individual minions for dinner last night! You could also pack it up in a tub or lunch box for a fun and healthy meal on the go.
This post is part of a special Minions themed challenge from Green Giant, purveyors of the UK’s favourite sweetcorn! Green Giant is teaming up with Universal Studios to celebrate the launch of the brand new Minions movie (out later this month, we CAN'T WAIT!) and they've invited several bloggers to come up with our own healthy snack, recipe or meal with a minion theme.
Seeing as we love healthy food, fun food, sweetcorn AND minions, I thought that this challenge was right up our street!
Minion Inspired Layered Rice Salad
Ingredients (makes 2 salad bowls)
- 75g basmati rice
- ¼ tsp turmeric
- 1 medium carrot
- 75g cooked chicken breast
- 60g green grapes
- ½ yellow pepper
- 1 198g tin Green Giant sweetcorn
- ¼ Cucumber
Method
Cook the rice in boiling water with the turmeric, which should turn the rice yellow. Once cooked, drain and rinse under cold water to quickly cool, then drain again and set aside.
Prepare all of the remaining ingredients apart from the cucumber; peel and grate the carrot, chop the chicken breast, halve the grapes, de-seed and chop the yellow pepper and drain and rinse the sweetcorn.
Layer up the following into two bowls; grated carrot, chopped chicken then halved grapes.
Pile the rice on top and spread evenly over so that it completely covers the ingredients below. Top with the yellow pepper and then layer over the sweetcorn, filling in any gaps so you have an even top to the salad.
Finish the salad off with a fun minion face made from cucumber.
To make, first cut off a slice of cucumber for the eye (use the end of the cucumber for smaller circles if you want two eyes). Cut a chunk off the cucumber, then slice off some of the skin and trim into thin strips to make the glasses straps. With a mini circle cutter, cut out tiny circles of cucumber skin to complete the eyes (you could also try using the end of a plastic straw if you don't have a suitably sized circle cutter). Cut a sliver of cucumber skin to make the mouth and any hair you wish to add.
Place the cucumber features on top of the salad to complete your minion!
