These quick and easy pumpkin themed mini Halloween pizzas make a great spooky snack or teatime treat for kids!
Today I have two quick and easy Halloween pizza recipes for you. These cute pumpkin pizzas and some fun mummy pizzas too. English muffins make a great base for a quick and easy pizza, and it's easy to add a spooky Halloween twist with the toppings.
These mini pizzas are really good for party food - they make a perfect sized individual pizza serving and they're easy to assemble in advance, ready to pop in the oven when you need them. To make life easier you could also bake in advance and serve them cold - they'll be just as tasty.
I used red Leicester cheese to make orange pumpkin pizzas, and pieces of red pepper to make the faces. You could use many other toppings of your choice to make the faces - green pepper, pepperoni or black olives all work well.
Why not get your kids to design their own - they could draw up their design and you could help them cut out any tricky shapes, before letting them arrange the faces on the pizzas before baking.
Pumpkin Halloween Pizzas
Ingredients (makes 4 mini pizzas):
- 2 English muffins
- 1 tbs Tomato puree
- 4 slices red Leicester cheese
- ½ red pepper
Method:
Preheat the oven to 180°C (350°F/Gas Mark 4).
Cut each muffin in half to make 4 rounds pizza bases. Place them cut-side up on a baking tray.
Spread a thin layer of tomato puree over the cut sides of the muffins.
Using a round cutter that is roughly the same size as the muffin, cut 4 circles from the red Leicester cheese slices. Use the same cutter to cut crescent slices from each side of the circles.
Arrange a cheese circle on the top of each muffin, leaving a small gap between the pieces to resemble the lines on a pumpkin.
Cut 4 Jack O'Lantern face shapes from the red pepper.
Arrange the pepper face shapes on the top of each pizza.
Bake in the oven for 5-10 minutes until the cheese is melted and starting to bubble.
Leave to cool for a few minutes before serving, or cool completely and pack in a lunch box.
