Pumpkin season is well underway and I'm sure I'm not the only one whose Facebook timeline is full of photos of friends and family visiting pumpkin patches with their children! Shops and cafes are full of pumpkin spice everything, so I thought I'd leap on the bandwagon with these fun pumpkin spice energy bites.
I have to admit, until last year I didn't actually know what pumpkin spice was. It wasn't until a reader asked me what on earth our English 'mixed spice' is that I did a little research and discovered that it is pretty much the same spice mix as pumpkin pie spice.
All these years I've been adding mixed spice to recipes and had no idea that I'd already (albeit unknowingly) jumped on the pumpkin spice bandwagon!
I created these fun pumpkin shaped energy bites using the easy homemade Halloween sprinkles that I shared with you here on the blog earlier this week. If you want to avoid food colouring, they will taste just us good rolled in plain uncoloured desiccated coconut, although they may not look quite so much like pumpkins.

These pumpkin spice energy bites don't have any actual pumpkin added, just the spice mix, but hey're full of delicious autumn flavours so they're perfect for this time of year.
Serve them up as a fun and healthy snack for your kids or even for Halloween party food, but be sure to check for nut allergies first if you're serving to a large group of children.
Pumpkin Spice Energy Bites
Ingredients (makes 14):
- 125g pecan nuts
- 100g dried apple rings
- 150g raisins
- 1 Tbsp ground almonds
- 1 Tbsp maple syrup
- ½ tsp mixed spice or pumpkin pie spice
- 50g orange homemade coconut sprinkles
- 7 whole pecan nuts
Method:
Line a baking tray or plate with grease proof or baking paper – be sure to check that it will fit in your fridge first.
Measure out the pecan nuts and place in a food processor or high-speed blender. Blend until finely chopped.
Roughly chop the dried apple rings and add to the blender, along with the raisins, ground almonds, maple syrup and mixed spice.
Whizz everything together until smooth and well combined. You might need to scrape the sides down a few times before the mixture comes together.
Turn the mixture out into bowl, then take walnut sized pieces of the mixture and roll it into balls.
Roll each ball in the orange sprinkles to coat.
Place the coconut coated energy balls on the lined baking tray or plate.
Slice the pecans in half length ways, then push a pecan half 'stalk' into the top of each energy bite to turn it into a pumpkin.
Pop into the fridge for 15 minutes or so to set, then store in an airtight container in the fridge until ready to serve.

Note: These energy balls should last for at least 5 days, though ours tend to get eaten quickly so never survive beyond a day or two!
