In honour of back to school season (my boys go back to school next week, sob!), I'm declaring this week Sandwich Week here on the Eats Amazing blog!

Every day this week I'll be bringing you a new quick and easy fun sandwich idea, and for today's sandwich I'm sharing not one, but four yummy 'sushi' sandwich roll-up recipes.

Be sure to check out my recipe video so you can see just how easy these are to make!

Healthy Lunch Box Ideas - 4 Fun and easy sushi sandwich roll up recipes for kids - perfect for bento boxes - Eats Amazing UK

Sushi sandwich roll-ups are a really quick and easy way to make sandwiches more fun and interesting, and they are really easy to customise to your kids tastes. You can make them with or without crusts (just cut them off before rolling out the bread if don't want the crusts) and there are loads of different fillings you can put inside them.

I'm sharing four easy and child friendly sandwich filling ideas in this post, but there are endless combinations you could use for your own sushi sandwiches.

These roll-ups sandwiches are perfect for packed lunches, bento boxes, snacks, party food or for just a fun lunch or tea at home - try serving them with chopsticks for extra fun and a sneaky way to practice those fine motor skills too (Psst, we've got special child friendly chop sticks in the Eats Amazing Shop if you need some!).

Tuna and Cucumber Sushi Sandwich Roll-Ups

    Ingredients:

    • 1 slice white or brown bread
    • 1 Tbsp tuna mayo
    • 2-4 sticks cucumber

    Method:

Place the piece of bread on a chopping board and roll out to flatten with a rolling pin. You can leave the crusts on (great for avoiding waste!), but if you'd prefer to remove them, cut them off before rolling the bread out.

Spread the tuna all over the flattened piece of bread.

Place the cucumber sticks in a row at one end of the tuna-covered bread, parallel to a shorter side.

Roll the bread up from the cucumber end first so that the cucumber ends up in the middle. Once rolled, gently but firmly press along the length of the roll so that it holds together.
