These easy but spooky Eyeball Caprese Bites make great a fun and healthy Halloween party food idea the whole family will love!
Today I have a really easy healthy Halloween food idea to share - Spooky Eyeball Caprese Bites! This fun Halloween recipe combines the traditional Caprese ingredients of tomato, mozzarella and basil into a spooky snack the whole family will love. This easy recipe is perfect for child friendly Halloween party food and you could even pop them in a lunch box too, for a fun creepy surprise!
I haven't posted a lot this month as I've been recovering from a serious shoulder injury that left me temporarily without the use of one arm, but as I've now recovered enough to get in the kitchen (and wield my camera!) I'll be making up for lost time over the next week with a whole host of fun Halloween food ideas and recipes!

Eyeball Caprese Bites
Ingredients:
- 200g ball mozzarella cheese
- 8-10 cherry tomatoes
- basil leaves
Equipment:
- melon baller
- single hole punch (optional)
- cocktail sticks
Method:
Using the smaller end of a melon baller, scoop balls of cheese from the mozzarella ball.
Slice the cherry tomatoes in half, so you end up with the same number of halves as the scooped out mozzarella balls.
Wash the melon baller, then use it to scoop the flesh from each cherry tomato half.
Place a ball of mozarella in each cherry tomato half.
Using a single hole punch, punch small circles from the basil for the eyeball 'pupils'. If you don't have a hole punch, you could also cut them out by hand with a small pair of clean scissors.
Place a circle of basil on the top of each 'eyeball'. Pop a cocktail stick into each eyeball, or skewer them in pairs.
Serve immediately, or cover and store in the fridge until ready to serve.
Note: If you can find mini mozzarella balls they work perfectly for this recipe and will save you a bit of time too. Simply use them in the place of the scooped out mozzarella balls in this recipe.

Capers for the pupils would be easier & tastier but then not a true capres.

I do a version of these, but find that it is much easier to use pickled cherry peppers which have been seeded and already have a perfect sized spot to place a mini mozzerella ball. I then top that with a slice of green or black olive for the eye. Not exactly caprese, but I find that people really like the cheese and cherry pepper together.

Thank you for the suggestion, I love that idea and it would go down much better with my oldest son who isn't a fan of tomatoes!
