    Easy Breakfast Bagel Quiche Recipe

    This month I have been working with New York Bakery Co to create some delicious new family friendly recipes to showcase their new Cheese Bagels. Today I'm sharing the first of the new recipes - a really easy breakfast bagel quiche.

    I came up with the concept for bagel quiches whilst brainstorming recipe ideas and was slightly disappointed after a quick check on google to find that it had already been done, but nonetheless I did some recipe experimenting of my own and was very pleased with the results - my own twist on the bagel quiche makes a really tasty breakfast idea that can be eaten at home or on the go.

    I can tell you first hand how delicious these new bagels from New York Bakery Co are - cheesy on the inside, with even more cheese sprinkled on top, the new Cheese Bagels are the perfect base for a tasty breakfast, lunch or snack. With the classic chewy bagel texture and the addition of cheese, the new bagels are the ideal partner to almost any topping out there, and they make the perfect base for these bagel quiches.

    Breakfast Bagel Quiche

    Ingredients: 

    • 1 New York Bakery Co Cheese Bagel
    • ¼ red pepper
    • 1 spring onion
    • 1 slice of ham
    • 2 large eggs
    • salt & pepper

    Method: 

    Preheat your oven to 190°C (Gas mark 5/375°F).

    Start by splitting the bagel into two equal pieces.

    With your fingers, carefully pull out a ring of soft bread from each bagel half (see video above for a detailed look at how to do this). Make sure there are no holes into the outside of the bagel - if you accidentally rip it, plug the hole by pressing back in a little of the bread.

    Place the two bagel halves onto a baking tray lined with grease-proof paper.

    Prepare the fillings - finely chop the pepper, wash and finely slice the spring onion, cut the ham into small pieces.

    Sprinkle the fillings into each bagel half, spreading them equally between the two halves.

    In a small jug or glass, whisk the eggs up with the salt and pepper.

    Pour the whisked egg over the toppings in each bagel, splitting the mixture evenly between the two halves. Don't worry if you accidentally pour some of the egg into the centre of the bagel - the egg will puff up during cooking.

    Pop the bagels into the oven and bake for 15-20 minutes until the egg is puffed up, set and cooked through.

    Serve warm or cool quickly and store in the fridge to be eaten later or packed in a lunch box.

      Your Quiche ideas are clever. I would also like to try to make pizza bagels: Spread some tomato puree. I would probably try out:

      Ham & Pineapple

      or Sweetcorn, mushrooms, peppers, onions, tomatoes, olives

      Knowing me, I would add a sprinkling of grated cheese (unless the bagels are so cheesy that this would not be needed) Then cook in the over, probably for around ten minutes.

      Bet these would be delicious too.

      cut the cheese bagel in half- and turn the halfs top down on the hot griddle then turn once heated and crisp griddle the other other sides put on each half caramalised onion, and grated apple topped with a mixture of crumbled cheese and onion crisps and grated cheddar, put under the grill until cheese melted!! scrumptious

      I think they make really nice 'sandwiches' for a party for a change, cut through and fill with delicious fillings and then put the top back on and cut in four, like you would a sandwich. Stand them on their sides for some fancy party sandwiches

      It's a bit fiddly and time consuming but olive tampenade and chopped up roasted peppers (th antipasti jars are fine) mixed with fresh basil in a bagel, popped in the oven with a grating of parmesan on top is really lovely.

      A mixture of cheddar and mozerella cheese with little bits of bacon is scrummy! especially if you add tomato purée underneath the cheese, it's like a mini pizza!

      My all time favourite is a toasted bagel with philadelphia, cherry tomatoes and avocado as a topping. Not forgetting the pepper!!!! So delicious.

      I'm a massive New York Bakery Co Bagel fan, I keep seeing these and wanting to try them but haven't got round to it yet! Love your idea.

      I would top with scrambled egg and smoked salmon 🙂 I think that would go really well with the cheesiness of the bagel!

      I love cheesy bagels, I do mine quite similar to this but first I spread the bagel with a little tomato puree and sprinkle a few mixed herbs then its cheese, ham, tomato, spring onion and somtimes jalepenos.

      Cut a bagel in half, toast it, then mix cheese with a little wholegrain mustard, a little Worcestershire sauce and smothered on the cut side and grill

      I love turning my bagels into mini pizzas for supper or a quick lunch! I simply spread passata onto the bagel, top with mozarella cheese + pepperoni and toast under the grill! Scrumptious!
