I'm really excited to share today's recipe, a delicious Halloween dessert of ghostly mini cheesecake bites that is perfect for fun Halloween party food!
These yummy cheesecake bites turned out just how I'd imagined them and they were so delicious that the tester batch didn't last out the day!
With just 4 ingredients for the gorgeous cheesecake filling, you can whip these little bites up in minutes, a quick and easy Halloween dessert that's sure to be a hit with everyone!
Serve them up at Halloween parties for an easy grab and go dessert, I'd seriously recommend making a double batch too because these yummy cheesecake bites won't hang around long!

Not celebrating Halloween? Skip the chocolate chip eyes and serve them plain with a drizzle of chocolate sauce instead, for an easy party dessert that works for every occasion!
Ghostly Mini Cheesecake Bites
Ingredients:
- pack of 18 ready-made mini tartlet pastry cases
- 100ml whipping cream
- 200g full fat cream cheese
- 50g icing sugar
- 1 tsp vanilla extract
- handful dark chocolate chips
Method:
Start by spreading the pastry cases across a plate or tray in a single layer.
Measure the whipping cream into a large clean bowl and whisk until thick and smooth.
Whisk in the cream cheese, then add the icing sugar and vanilla extract. Whisk together until well combined and smooth.
Spoon the cheesecake mixture into an icing bag with a large plain round icing nozzle.
Pipe the mixture into the pastry cases. It should naturally form little ghost shapes.
Add two chocolate chips to each ghost for eyes.
Place the cheesecake bites into the fridge for an hour or so to set.
Serve and enjoy!
