These healthy Easter nests are a great alternative to chocolate and make a fun healthy Easter snack idea for kids!
Easter is only a few weeks away, so today I'm sharing the first of this year's fun Easter food ideas - healthy vegetable nests!
These healthy alternatives to chocolate nests are so quick and easy to make and are made from nothing but raw vegetables - perfect as a fun after school snack idea, to pop into an Easter themed lunch box or to make in bulk for fun and healthy Easter party food!

Healthy Easter Nests
Ingredients
- 1 carrot
- thick slices of cucumber
Method
Wash and peel the carrot. Using a julienne peeler, cut the carrot into thin straw-like strips. If you don't have a julienne peeler, use a sharp knife to cut the carrot into really thin strips or grate the carrot instead.
Pile the carrot into cupcake cases (I use brightly coloured silicone cases) or small ramekins, shaping into a rough nest with your fingers.
Cut egg shapes from the cucumber slices using an oval shaped mini bento cutter. Pop a few into each nest and serve.

What a great idea! I found this recipe when I was looking up healthy Easter nests as I'm just writing up my blog at my attempt at a twist on the traditional version.
