Quick and Easy Healthy Easter Nests

These healthy Easter nests are a great alternative to chocolate & make a fun Easter snack idea for kids! Great for a cute Easter themed packed lunch too!

Ingredients

  • 1 carrot
  • thick slices of cucumber

Instructions

  • Wash and peel the carrot.  Using a julienne peeler, cut the carrot into thin straw-like strips.  If you don't have a julienne peeler, use a sharp knife to cut the carrot into really thin strips or grate the carrot instead.
  • Pile the carrot into cupcake cases (I use brightly coloured silicone cases) or small ramekins, shaping into a rough nest with your fingers.
  • Cut egg shapes from the cucumber slices using an oval shaped mini bento cutter.  Pop a few into each nest and serve.
