    Coconut Frozen Yoghurt Bites

    Today I'm continuing the Eats Amazing festive snacks series with some yummy coconut frozen yoghurt bites. These are so easy to make and always go down well with my boys whatever the weather!

    You can eat them as they are straight from the freezer, add chopsticks to make eating them a fun challenge (great for practicing fine motor skills too!) or just pop one or two shapes on top of a bowl of plain yoghurt to decorate it.

    I like putting these into lunch boxes too, they do melt a bit but they help to keep the rest of the lunch cool and are usually soft enough to eat with a spoon but still nice and frosty at lunch time.

    I used fun festive shaped silicone moulds to make these, but any shape mould would work, or an ice cube tray too, if you don't have any shaped moulds.     Coconut Frozen Yoghurt Bites

    Ingredients:

    • 200g Greek yoghurt
    • 1 tbs desiccated coconut
    • drizzle of honey to taste
    • chocolate chips (optional)

    Method:

    Weigh out the yoghurt and pop it into a bowl with the coconut and honey. Give it a good stir to thoroughly combine the ingredients.

    Drop spoonfuls of yoghurt into each section of a silicone mould.  Smooth over the tops, then tap the mould gently on the table to bring any air bubbles to the top.  Using a piece of damp kitchen paper, clean any excess yoghurt from around each shape so that it freezes neatly with no extra edges.

    If using chocolate chips, add them to the mould first, then drop the yoghurt on top and follow the steps above.

    Put the mould into the freezer for a couple of hours until the shapes are frozen solid, then pop them out as you need them.  Cover any extra shapes left in the mould with clingfilm to keep them fresh and put the mould back into the freezer until you need them.

        Thank you, it really depends on the temperature in the room, but if you leave them out for 5 minutes or so to soften a little they can still be picked up and eaten easily.
