- 200 g Greek yoghurt
- 1 tbs desiccated coconut
- drizzle of honey to taste
- chocolate chips (optional)
Weigh out the yoghurt and pop it into a bowl with the coconut and honey. Give it a good stir to thoroughly combine the ingredients.
Drop spoonfuls of yoghurt into each section of a silicone mould. Smooth over the tops, then tap the mould gently on the table to bring any air bubbles to the top. Using a piece of damp kitchen paper, clean any excess yoghurt from around each shape so that it freezes neatly with no extra edges.
If using chocolate chips, add them to the mould first, then drop the yoghurt on top and follow the steps above.
Put the mould into the freezer for a couple of hours until the shapes are frozen solid, then pop them out as you need them. Cover any extra shapes left in the mould with clingfilm to keep them fresh and put the mould back into the freezer until you need them.
