Simple Raspberry Yogurt Mousse Pots Recipe

Today I'm sharing a really simple yogurt mousse recipe - this easy raspberry mousse has just four ingredients and makes a lovely simple Valentines dessert for kids. It's easy enough that they could have a go at making it themselves too (be sure to supervise blender use though!) and of course it can be enjoyed all the year around, not just for Valentines day.

It's been a quiet few weeks here on the blog as I've been rather snowed under with freelance work (yay for work but boo for not enough hours in the day!), but I've also been working on lots of fun new recipes behind the scenes so keep your eyes peeled for some fun projects coming up. I've got several lovely Valentines themed snacks to share so I'd better get writing as I'm fast running out of time!

Back to the raspberry mousse though; this recipe is made with yogurt and gelatine and is a lovely light and healthier alternative to shop bought mousses. You can control exactly how much sugar goes in it and there are no artificial colours, flavours or other unpronounceable ingredients!

The recipe makes four little mousse pots but is easily doubled if you're feeding a crowd.  We made ours in some little heart shaped ramekins that I found in our local pound shop but you could use any little ramekins or bowls.

    Easy Raspberry Yogurt Mousse

    Ingredients:

    • 100g fresh or defrosted frozen raspberries
    • 150g thick Greek yogurt
    • 2-3 tsp honey
    • ½ sachet (6g) powdered gelatine

    Method:

Start by popping the gelatine into a small bowl and adding 2 tablespoons of hot water. Stir until the gelatine powder has completely dissolved.

Whizz the raspberries in a blender or food processor.

Add the yogurt to the raspberries with the honey to taste and blend until smooth.

Add the gelatin mixture to the blender and blend until well combined.

Pour the mousse mixture into small ramekins or serving bowls and place in the fridge for at least 2 hours or overnight until set.

    Serve straight from the fridge.
