    Monster Apple 'Donuts' Recipe

    Halloween foods can often involve quite a lot of sugar, so this year I've tried to create some healthier Halloween themed food ideas for kids, including these fun Monster apple 'donuts' which make a really fun healthy snack for kids.

    Fun monster apple donuts - healthy Halloween snack recipe for kids with homemade coconut sprinkles

    I created these fun monster themed apple 'donuts' using the easy homemade Halloween sprinkles that I shared with you yesterday. The only added sugar is in the (optional) candy eyeballs, so on the whole this is a great lower-sugar snack for Halloween.

    Fun Monster themed apple donuts for Halloween - healthy snack idea for kids

    My boys really enjoyed this fun snack idea, so I'll continue to make them all the year around, with or without the monster eyes and Halloween themed sprinkles!

    If you'd prefer to avoid the food colourings, plain uncoloured coconut will work just as well and the eyeballs can also be missed off or replaced with dried fruit or dark chocolate chips.

    Fun Halloween food for kids - This monster apple donuts recipe makes a fun healthy snack

    Monster Apple 'Donuts'

    Ingredients: 

    • 2 large apples
    • 3 Tbsp smooth peanut butter
    • homemade Halloween coconut sprinkles
    •  edible candy eyeballs

    Method: 

    Cut the apples horizontally into round slices around 1cm thick.

    Using mini bento cutters, an apple corer or a sharp knife, cut the core from each apple slice.

    Spread each apple slice with a layer of peanut butter.

    Sprinkle with homemade Halloween coconut sprinkles. I used all four colours (green, orange, purple and black) but you can use any colour(s) of your choice.

    Finish the monster donuts off with a sprinkling of edible candy eyes.

    Serve immediately and enjoy!

    Note: This recipe should be served as soon as possible after making, but if you make them for party food where they may sit for a little while before eating, the apple slices should be dipped in cold water with a little lemon juice immediately after cutting to help prevent browning. Dry them off on a piece of kitchen paper before spreading with peanut butter.
