Traffic Light Fruit Smoothie Recipe

Today I'm sharing a fun traffic light fruit smoothie recipe that I put together recently.

I've called it a traffic light smoothie because it's based on the three colours of a set of traffic light; red, yellow and green, and it was a big hit with my vehicle loving boys!

The smoothie is made entirely from fruit and fruit juices and is a very fun way to get some of those 5 a day into your child! These would be great at a vehicle themed party, or for an extra special healthy breakfast.

Method

Prepare your ingredients - peel the mango and cut into small chunks, wash and hull the strawberries, then cut into quarters, peel the kiwi fruit and cut into chunks, cut the cucumber into chunks.  Lay the fruits and cucumber on baking sheets and freeze for a couple of hours, keeping the different fruits separate from each other.

Once frozen, blend the strawberries with a little fruit juice to form a thick smoothie.  Pour into a glass to form a layer filling just under a third of the glass. Next, blend the mangos with a little fruit juice to form a second smoothie, and layer it on top.  If you are having trouble with the layering, try putting the glasses with the first layer in the freezer for half an hour to set before pouring on the second.  Finally, blend the kiwi fruit, cucumber and a little fruit juice to form a third smoothie, and layer over the top as before.

Serve immediately, or chill in the freezer for up to half an hour before serving.

For the fruit juices, I happened to have a few different juices open so I used pineapple juice with the strawberries, orange juice with the mango and apple juice with the kiwi and cucumber, but almost any fruit juice should work.

You can pour any leftover smoothie mixture into lolly moulds and freeze to make tasty fruit ice lollies or into silicone cups to make frozen smoothie bites.
