Today I'm sharing a really easy family friendly prawn and mango curry recipe, which is made in the Tefal Actifry. I've had an Actifry for a few years now, and I wouldn't be without it! I use it a couple of times a week, most often to roast up some veggies or make chips and potato wedges (Check out my easy potato wedges and sweet potato curly fries recipes, also made in the Actifry), but there's so much more you can cook in it and recently I was invited by Tefal to take part in a challenge to show just how versatile the Actifry is.
Along with 5 other bloggers, I headed up to London for a filming day where I had the chance to make my recipe on camera. It was a really fun day in the Jenius Social kitchen, hosted by Jessica Wright, and we had a blast taking part in the challenge and filming our recipes. I wanted to create a family friendly meal for my new Actifry recipe, so I made this fruity prawn and mango curry for the challenge. It's mild, sweet and child friendly, but quick to make and full of healthy ingredients and lots of flavour. Before filming, I tested it on my kids and I'm pleased to say I got a big thumbs up from both of them!
Easy Actifry Prawn & Mango Curry
Ingredients:
- 1 large onion
- 1 red pepper
- ½ Tbsp vegetable oil
- 2-3 Tbsp mild curry paste (preferably korma)
- 1 mango (or 200g fresh mango chunks)
- 1 400g tin tomatoes
- 1 400g tin coconut milk
- 300g cooked and peeled king prawns
- Handful flaked almonds
- Fresh coriander leaves
Method:
Prepare the ingredients; roughly chop the onions and peppers, stone, peel and roughly chop the mango.
Place the onion and red pepper in the ActiFry and drizzle over the oil. Set the timer and cook for 8 minutes.
After 8 minutes, stir in the curry paste and cook for another 2 minutes.
Add the mango, chopped tomatoes and coconut milk and cook for another 10 minutes.
Stir in the prawns and cook for another 5 minutes until the prawns are heated through.
Whilst the prawns are cooking, chop the coriander. Once cooked, sprinkle over the chopped coriander and flaked almonds.
Serve with brown rice, naan bread, and steamed vegetables for a healthy family meal.
You could pop small bowls of extra coriander leaves and flaked almonds on the table for sprinkling too - kids often love adding extras!
