Nothing says summer like a gorgeously bright fruity smoothie, and with the weather so wintry and dismal this week, I thought it was about time I injected a bit of extra colour into our diets! This pretty layered smoothie was inspired by the new frozen fruit packs from Dole which I had the opportunity to try recently. I already love Dole's canned fruit - it always seems to have so much more flavour than other brands, so I was excited to see whether their new frozen range would live up to my high expectations too.

I was very impressed with the range of frozen fruits available from Dole - there are 6 delicious varieties to choose from. From raspberries, pineapple chunks and blueberries to sliced strawberries, a triple berry mix and a tropical mix, there really is a frozen fruit pack to suit everyone, and just like their other products, Dole has come up trumps with their usual high quality fruit that's bursting with flavour. The beauty of these frozen fruit packs is that you can have seasonal fruits in your freezer all the year around, so you can pretend it's summer even when the winter rain is pouring down outside!
I was challenged to design my own smoothie made using a Dole frozen fruit pack, but I found it so difficult to choose just one that I went for two yummy flavours. Sliced strawberries and a tropical fruit mix make for a gorgeously bright and colourful smoothie, and the frozen fruit packs make it easy to create a really impressive looking (not to mention delicious) layered smoothie in a matter of minutes. If you close your eyes while you're sipping at this smoothie, you could easily pretend to be sitting on a beach somewhere!
This smoothie really brought a smile to my face so I named it my 'sunshine smoothie', it felt like a real treat! The rest of the family agreed that it was a seriously delicious smoothie combination so I'll definitely be making another one soon!
Layered Sunshine Fruit Smoothie
Ingredients (serves 4):
For the red layer:
- 250g Dole frozen sliced strawberries
- 200ml apple juice
- 1 tbs honey or maple syrup
For the yellow layer:
- 250g Dole Tropical Mix frozen fruit
- 200ml orange juice
- 1 tbs honey or maple syrup
Method:
To start, get your glasses ready for serving, as you'll need to work quite fast once the smoothie is made.
First make the red layer. Place the Dole frozen sliced strawberries, apple juice and honey or maple syrup (to taste) into a high speed blender.
Whizz together until smooth, then quickly tip into a clean jug or bowl and place it in the freezer to keep cold.
Working quickly, give the blender jug a quick rinse then place the Dole tropical mix frozen fruit, orange juice and honey or maple syrup (to taste) into the blender.
Whizz together until smooth.
To serve, take the red mixture from the freezer and split between four glasses (it should fill them each to around the half way mark), then carefully top with the yellow mixture, spooning it into the glass if necessary.
Add straws and sparkles if wanted and serve immediately.
NOTES: This recipe serves 4 but can be easily halved - just use half the ingredient amounts when preparing the two smoothie mixtures.
