    Autumn may be on the horizon but I'm still clinging to summer for all it's worth and you can't get much more summery than these yummy frozen watermelon yogurt pops!

    These fun and healthy homemade ice lollies are really easy to make and you don't need an ice lolly mould or any other special equipment - all you need are some ice lolly sticks and a few simple ingredients to make them.

    This is a really fun recipe to make with kids, and the resulting yummy frozen pops make a great summer snack or a fun dessert. They're even healthy enough for breakfast - my boys loved eating these after a small bowl of cereal for their breakfast during our recent heatwave!

    Frozen Watermelon Yogurt Pops

    Ingredients (makes 6):

    • 100g Greek yogurt
    • drizzle honey or maple syrup (optional)
    • 1 round slice seedless watermelon
    • 6 lolly sticks

    Method:

    Place the yogurt in a small bowl with a drizzle of honey or maple syrup if using. Stir well to completely combine.

    Slice the watermelon round into 6 roughly equal triangles.

    Using a small sharp knife, cut a triangle into the middle of each piece and remove.

    Push a sharp knife into the rind of each watermelon slice to create a slit for the lolly stick.

    Push a lolly stick into each watermelon slice.

    Place the melon slices on a lined tray or plate. Be sure to check that the tray will fit in your freezer first!

    Drop a spoonful of yogurt into the empty triangle inside each watermelon piece. Tap the tray on your workshop to ensure that the yogurt fills underneath the lolly stick too, and top up each slice with a little more yogurt if needed.

    Place in the freezer and freeze for at least 2 hours or overnight until the yogurt is frozen through and solid.

    Once frozen, carefully peel the melon pops from the tray, leave them on a plate at room temperature for a couple of minutes to soften a little then serve immediately.
