    Easter Nest Cupcakes Recipe

    These delicious Easter nest cupcakes have a yummy vanilla cupcake base topped with traditional chocolate crispy nests for an extra special Easter treat!

    I hope you are all prepared for Easter Day tomorrow! I've got one last Easter themed food post to share with you this year - a delicious Easter nest cupcake recipe from Stork.

    These fun little cupcakes give you the best of both worlds, with a yummy cupcake sponge on the bottom and a true Easter classic, chocolate cornflake nest on top, finished with a favourite of mine - Cadbury mini eggs.

    I shared my version of a healthy Easter nest here on the blog last week, but this recipe is well and truly a treat - everything in moderation as they say!

    Easter Nest Cupcakes Recipe - vanilla cupcake and chocolate nest in one - a delicious treat for Easter

    Easter Nest Cupcakes

    Ingredients

    For the cakes

    • 115g Stork tub
    • 115g caster sugar
    • 2 large eggs
    • 115g self-raising flour
    • ½ tsp baking powder

    For the chocolate nests

    • 40g Stork tub
    • 3 tbs golden syrup
    • 6 tbs drinking chocolate powder
    • 18 tbs cornflakes or branflakes
    • 1 ½ bags Cadbury mini eggs

    Method

    Preheat your oven to 190°C (Gas mark 5/375°F).  Line a muffin tin with 12 silicone cups or paper muffin cases.

    Measure out your cake ingredients into a large bowl, cracking the eggs and sifting the flour and baking powder as you go.  Beat until well mixed, then divide the mixture between the 12 muffin cases.

    Bake cakes in the oven for 15-20 minutes until golden and springy to touch.  Leave to cool on a wire rack.

    Once cool, prepare the chocolate nest topping.  Gently melt the stork and golden syrup together then stir in the chocolate powder until completely combined.  Add the cornflakes and gently stir until they are fully coated in the chocolate mixture.

    Place a tablespoon of the mixture on the top of each cupcake and arrange in a nest shape.  Finish off with the mini eggs (I added three to each nest) and leave to set.

    This year, Small Child's birthday falls on the Easter weekend, so to ensure that his special day isn't overshadowed by Easter, we're celebrating his birthday all weekend long with fun activities, treats and special meals.  This recipe arrived just at the right time for us, as I decided to make the cakes and serve them up as part of his birthday celebrations during a lovely tea-party we had in the garden this afternoon.

    He's also having a party with his friends later on this month, so we're saving the 'proper' birthday cake for then, but we still needed candles, so candles were duly produced and added to our Easter nest cakes! I also made them a little bit fancier with the addition of some cupcake wraps - I think they looked really pretty!

    Small Child was absolutely delighted with these special cakes for his Easter birthday! Although lighting them was a challenge in the windy weather conditions, he was happy to pose with his cakes before bringing them indoors for the lighting of the candles and a rendition of Happy Birthday!
