Apparently yesterday was Watermelon day, so I'm a little late with today's Berry and Coconut Watermelon Pizza recipe, but it's such a lovely healthy summer dessert I had to share it anyway, I think we'll be enjoying these fruit pizzas all summer long!
This recipe is really easy to put together and a fun one to make with kids - even the smallest toddler can help spread the topping and decorate the pizza with the berries. They'll love helping to eat it too!
As well as being a great healthy dessert that feels like a real treat, this recipe is vegetarian, gluten free and nut free, so a lovely inclusive dessert to bring to a party in case of allergies.
I've seen so many watermelon pizzas on Pinterest etc that I can't credit the original source of the idea, but I took inspiration from the general idea and ran with it in my own way. I decided to try adding coconut to our watermelon pizza and I've got to say, the combination was absolutely gorgeous! I probably shouldn't say it as it's my recipe, but I'm not going to be modest, if you're thinking of giving watermelon pizza a go, then do try this recipe first, we couldn't stop eating it!
Berry & Coconut Watermelon Pizza
Ingredients (makes 6 slices):
- ½ Watermelon
- 150g thick Greek yogurt
- 2 tbs desiccated coconut
- 15g coconut flakes
- mixed berries to decorate*
Method:
Cut a large round slice off the watermelon, about 1.5-2cm thick.
Place the slice on a board and slice it into 6 equal slices, as you could cut a pizza.
Measure out the yogurt into a bowl and add the desiccated coconut. Stir well to combine.
Place the watermelon onto the plate or board that you wish to serve it from. Push the slices back together to form a complete circle of watermelon.
Dollop the yogurt mixture into the centre of the circle of watermelon. Spread it over with the back of the spoon, covering the watermelon slice nearly to the edge all of the way around (see photos below).
Taking note of where the watermelon has been cut, top each slice with a mixture of the berries.
Finish by scattering the flaked coconut all over, then serve immediately and enjoy!
Notes:
*I had several different berries in the fridge so used strawberries, raspberries, blueberries and blackberries for our pizza. Any combination of these or even just one type of berry would work for this recipe.
If you're thinking of bringing this to a party or barbecue, I'd recommend preparing the ingredients first (wash and hull the berries, make up the yogurt mixture into a small tub, pop the flaked coconut into another) then slice the watermelon and assemble the pizza once you get there, as this recipe is best eaten as soon as possible after assembling.
For a dairy free version, try substituting the Greek yogurt for a dairy free alternative. Be aware that you may need to use a little less yogurt as it won't be as thick as Greek yogurt.
