I've given the classic rice crispy cakes recipe an Easter upgrade with this yummy Easter Nest Crispy Cakes recipe that kids will love!

You can’t beat a chocolate crispy cake – every child should have the chance to make these yummy treats at some point in their childhood! They are the perfect base for making edible Easter nests for a fun Easter treat the whole family can enjoy.
We used rice crispy cereal to make our crispy cakes, but if you don't have any, don't worry, you'll find a list of alternative ingredients further down this post.
To save time and keep things easy we melted our chocolate in the microwave, but you can also use the double boiler method on the stove top if you prefer – just pop the ingredients in a heat-safe glass bowl, place over a saucepan of simmering water and stir until melted.
Easter Nest Crispy Cakes
Ingredients (makes 12):
- 150g dark chocolate
- 50g butter
- 2 Tbsp honey
- 100g rice crispy cereal
- 36 mini eggs
Method:
Line a 12 hole muffin tin with muffin cases.
Break or cut the dark chocolate into small pieces and place in a large microwave safe bowl.
Add the butter and honey to the bowl, then pop it into the microwave and heat in short bursts of around 30 seconds, stirring in between, until all the chocolate has melted.
Note: Be patient and don't be tempted to heat for longer at a time as chocolate is very easy to burn!
Mix well to completely combine the ingredients, then add the rice crispy cereal to the bowl.
Carefully mix it all together until the cereal is completely coated in the chocolate mixture.
Spoon the crispy mixture into the muffin tin, dividing equally between the 12 cases.
Working quickly, press down gently in the centre of each crispy cake with the back of a spoon to make a rough nest shape.
Decorate each crispy cake by popping 3 mini eggs in each hollow.
Once finished, pop the nest crispy cakes in the fridge to chill for an hour or so until set.
Serve and enjoy!
Alternative Ingredients:
If you don't have rice crispy cereal, you can easily substitute it in this recipe for another cereal - the following all work well:
- cornflakes
- bran flakes
- all bran (makes really pretty nests!)
- full sized shredded wheat (break up before adding to the chocolate mixture)
- cherrios / mutligrain hoops
- puffed oats
If you prefer to use milk chocolate it's fine to substitute it for the dark chocolate in this recipe.
If you don't have honey, you can substitute it with maple syrup, golden syrup or agave nectar.
If you can't find mini eggs, you could give the recipe a slightly healthier twist by using blueberries or grapes!
