In today's post I'm sharing a fun and simple rainbow cocktail for kids. This is one of those projects that started one way, and unexpectedly turned out slightly differently from how I had imagined it, but the final result was still fun and delicious, and I thought it was worth a share! I was originally attempting to make rainbow ice cubes (inspired by these super fun rainbow cubes from Happy Hooligans), but instead of using food colourings, I wanted to see if I could make them all natural and sneak in some extra vitamins!) by using fruit juices instead.
I started by hunting out the brightest fruit juices I could find. I found some gorgeous bottles of fresh fruit juice in M&S - they have a great selection of weird and wonderful flavours which are all naturally brightly coloured so I grabbed a three different flavours to try.
I also added some plain orange juice, this gave me four contrasting flavours to work with. I filled an ice cube tray with the different juices, and popped it in the freezer overnight to set.
Once the fruit cubes were well and truly frozen I popped them out of the ice cube tray and into a couple of glasses. Aren't they pretty?!
I decided to top them up with carbonated water for a bit of fun fizz. This is where the project took an interesting twist - as I poured the water (which was at room temperature - I'd forgotten to put it in the fridge) over the cubes the fruit juice immediately started to melt, colouring and flavouring the drinks as it did so. Thinking quickly, I grabbed a couple of cocktail umbrellas and popped them on top, presenting Small Child with his very own yummy and healthy kids cocktail!
Small Child thought it was really fun, watching the water change colour before his eyes made it a 'magic drink'! He really enjoyed drinking it up, stirring it with his straw and seeing all the different coloured ice cubes appearing as he did so. Thought the end result of this little project was different to how I expected, I'll definitely be making these again in the summer, I think these fun fruity 'magic' drinks will be a big hit at summer BBQs and parties!
