Today I have a beautiful rainbow bagel to share with you. I'm sure you've seen those amazing rainbow bagels, that are properly rainbow all over, well this isn't one of those, but it's every bit as awesome and probably rather healthier than the food colouring filled, sprinkle topped ones!
We've been eating a lot of bagels recently after Genius sent us over some of their gluten free bread and bagels to try. Whilst we are lucky enough not to have any issues with gluten in this house, I have several friends and even family members who have to avoid it, so I thought it would be good to try them for future reference. We were pleasantly surprised at how nice they were, gluten free products have come a long way!
I served the bagels up to my boys without telling them that they were gluten free to see what their reactions would be. My 3 year old munched his straight down without comment, he does love his food! My 8 year old did notice that I'd used different bagels than usual, he thought the texture was a bit different but he still finished it off and asked for more.
Genius sent over both plain bagels and cinnamon & raisin bagels, and they both went down well with my boys, with the cinnamon & raisin bagels being their favourite. We found that the bagels were particularly good when split and toasted, the boys much preferred them this way.
We used the plain bagels for our rainbow bagels. I was inspired to create these after seeing these beautiful rainbow fruit salad bagels from Fork & Beans. I wanted to create a savoury version so used crunchy salad vegetables for ours. I thought the boys might pick some of the vegetables off so I was pleasantly surprised when they both ate the lot and said they really enjoyed them.
Healthy Rainbow Bagels
Ingredients:
- 1 gluten free bagel
- 2 tbs cream cheese
- ¼ cucumber
- handful sugar snap peas
- ¼ red pepper
- ¼ yellow pepper
- 1 small carrot
Method:
Split the bagel in half, then pop into the toaster.
Whilst the bagel is toasting, prepare the vegetables; slice the cucumber into thin rounds then cut in half to make crescents, wash and slice the sugar snap peas, finely chop the red and yellow peppers and peel the carrot. Using a vegetable peeler, cut the carrot into ribbons.
Once toasted and cooled a little, spread cream cheese over the cut side of each bagel half. Top with the vegetables, starting with the cucumber, then the sugar snap peas, then the yellow pepper, carrot strips and red pepper until the bagel is completely covered in a vegetable rainbow.
Serve immediately and enjoy!
Notes: I picked out vegetables that I knew my boys would both enjoy, but you can substitute different vegetables in if preferred. Other colourful vegetables that I think would work really well for the recipe include beetroot (try it chopped or grated), sweetcorn, cherry tomatoes or spring onions.
