These quick and easy Batman cupcakes with fondant icing toppers are the perfect bake for little superheros!
Today I'm showing you how to make some super easy Batman cupcakes! These fun cupcakes inspired by the classic superhero really are easy to make and would be perfect for a superhero party or even Halloween with kids.
I made these cupcakes at the request of my younger son for his birthday party back in the summer. You may have seen the rather epic snake cake I baked for his birthday (I'm very proud of that one), but my birthday baking didn't end there. His party was on a different day from his actual birthday so more cake was needed!
The party was at our local soft play centre and I decided that cupcakes would make life easier than a big cake, as they are easier to transport and easier to divide out at the end of the party.
As per our usual birthday tradition, I let the birthday boy choose the theme. I thought he might like the minion cupcakes that I made for his big brother a few years ago, but he decided on Batman so I gave it my best shot.
The story behind his choice of theme is so sweet - he was so excited about having his first proper party and inviting his best friends, that everything he asked for connected to the party was about his friends and what he thought they would like. He helped me choose some treats for the party bag based on his friends' favourite sweets and toys, and he wanted Batman cupcakes because his very best friend loves Batman.
In the run-up to the party he kept asking if I'd made the cupcakes yet because he couldn't wait for his friend to see them. I know I'm a bit biased but he really is such a sweetheart!
The Batman theme was a fairly last minute decision so I didn't have time to order a special cutter and instead had to raid my Halloween cookie cutters collection for a suitable bat shaped cutter.
One of my friends pointed out that it was the wrong bat shape for the Batman logo (thanks for that, you know who you are!) but by happy coincidence it turns out that it's pretty close to the Lego Batman logo so I'm going to pretend that Lego Batman cupcakes were my goal all along!
Easy Batman Cupcakes
Ingredients (makes 12):
For the chocolate cupcakes:
- 125g butter (softened) or dairy free alternative
- 125g soft light brown sugar
- 2 large eggs
- 125 g plain flour
- 25 g cocoa powder
- 10 g (2 tsp) baking powder
- black food colouring (optional)
To decorate:
- 100g softened butter or dairy free alternative
- 225g icing sugar
- 1 tsp vanilla extract
- 1 Tbsp milk or dairy free equivalent
- yellow gel food colouring
- 125g black ready to roll fondant icing
- 125g yellow ready to roll fondant icing
Method:
Preheat the oven to 180°C (Gas mark 4/350°F). Line a 12 hole muffin tin with muffin cases.
Pop the butter into a mixing bowl then add the sugar and eggs. Sift the flour, cocoa powder and baking powder on top and using an electric whisk on a low speed, gently blend the ingredients together. Add the black food colouring if using, then increase the mixer speed and whisk for a few more seconds until completely combined.
Divide the cake mixture equally between the muffin cases and smooth over the tops with the back of a spoon. Bake for 20-25 minutes until risen and springy to the touch. Transfer to a wire rack to cool.
Meanwhile, make the buttercream icing. Whisk the butter with an electric whisk until light and fluffy. Sift in the icing sugar, a little at a time, until completely combined. Add the vanilla extract and whisk again. Add the yellow food colouring, then add the milk in small splashes, whisking in between, until the icing is at the correct consistency for spreading.
Once the cakes are cooked, transfer to a wire rack to cool. Whilst the cakes are cooling, create the Batman themed toppers from the fondant icing ready to decorate the cakes.
To make the toppers, you will need a small bat shaped cutter and two circle cutters - one the same size as the top of your cupcakes, and one slightly smaller.
Dust your worktop with a little icing sugar to stop the fondant from sticking, then roll out the black fondant to around the thickness of a £1 coin.
Using the cutters cut 6 large circles, 6 smaller circles and 6 bat shapes from the fondant. Repeat with the yellow fondant. You should end up with 12 of each shape - 6 of each colour.
Layer up the shapes in alternate colours, e.g. 1 large black circle, 1 smaller yellow circle and 1 black bat, or vice versa.
Press gently together, or use a little water to stick the layers to each other if needed.
Once the cupcakes are completely cool, decorate the cupcakes.
Spread a good dollop of buttercream over the top of each cupcake (or pipe on a swirl if you're feeling fancy!), and top each one with a Batman fondant topper, pressing gently around the edges to mould it to the top of the cake.
Store in an airtight container until ready to serve.
Enjoy!
