Following on from yesterday's healthy pancake muffins recipe, today I'm sharing a bento lunch that I packed for Small Child recently using the pancake muffins. I think it would make a really fun packed lunch idea for pancake day, which is why I'm sharing it today, as pancake day is fast looming - it's next Tuesday.
The lunch itself is quite simple, including some hearts as a nod to tomorrow's Valentines day too, but I thought the idea of pancake muffins for lunch was a fun one!
With Small Child's pancake muffins, I also packed a small sauce container with some maple syrup for dipping, and some extra blueberries, which I scattered around the muffins. On the side I packed a couple of slices of ham, which I rolled and skewered on heart picks, slices of cucumber (under the carrots) and some raw carrot pieces, which I cut into hearts using a mini bento cutter. I finished the lunch off by topping the pancake muffins with mini animal fork picks for a little extra fun. This lunch was packed in our Munchkin bento box.
