Fruit Topped Mini Rice Cakes

This delicious fruit topped mini rice cakes recipe makes a great quick & easy healthy snack for kids! Serve up at a tea party, picnic or party food too.

Ingredients

  • 8 strawberry flavour mini rice cakes
  • 1 Tbsp cream cheese
  • Fresh berries I used strawberries, raspberries and blueberries

Instructions

  • Spread a little cream cheese over one side of each rice cake.
  • Prepare the fruit - cut the strawberries into round slices, halve the blueberries.
  • Use a selection of raspberries, strawberry slices and blueberry halves to top each mini rice cake.
  • Serve immediately.
