Organix recently sent us some of their new strawberry rice cakes to try, so I decided to try something a little different with them. I topped the mini rice cakes with cream cheese and berries, and just like that, our new favourite snack was born!
I've been buying Organix rice cakes since my now ten year old was a baby, with the apple flavour being a firm favourite in our house. The mini rice cakes are perfect for a quick snack, and I've been known to enjoy them myself on many occasions - never mind the kids!
Organix have quite a range of rice cake flavours available now, and I'm very happy to recommend the delicious new strawberry flavour!
Though they taste delicious on their own, adding a little cream cheese and fruit to them seriously elevates them to a new level - not only do you get some extra nutrients with the additional toppings, but they really do taste amazing, so I just had to share this simple snack idea with you all!
Fruit Topped Mini Rice Cakes
Ingredients:
- 8 strawberry flavour mini rice cakes
- 1 Tbsp cream cheese
- Fresh berries (I used strawberries, raspberries and blueberries)
Method:
Spread a little cream cheese over one side of each rice cake.
Prepare the fruit - cut the strawberries into round slices, halve the blackberries.
Use a selection of raspberries, strawberry slices and blueberry halves to top each mini rice cake.
Serve immediately and try not to eat them all yourself!
