Easy Homemade Granola

This easy homemade granola recipe makes a great fun and healthy breakfast for kids!

Ingredients

  • 1 Tbsp coconut oil
  • 2 Tbsp honey
  • 1 tsp vanilla extract
  • 200 g oats

Optional extras:

  • 100 g dried fruit of your choice
  • 50 g seeds or roughly chopped nuts of your choice

Instructions

  • Preheat your oven to 180°C (Gas mark 6/400°F).
  • Place the coconut oil in a small microwave safe bowl and warm it by microwaving at 15 second intervals until completely melted.   Add the honey and vanilla extract, then stir to combine.
  • Weigh out the oats into a large bowl, then add the coconut oil, honey and vanilla mixture and stir until the oats are coated and starting to clump together.
  • Tip the mixture onto a baking tray or roasting tin and spread out in one even layer.
  • Bake oats for 15 minutes, giving them a good stir half way through to help them cook evenly.  Once the granola is cooked and golden, take out of the oven and leave to cool.
  • Once the granola is cool, tip into a large bowl and add dried fruit and nuts if using. Mix together until combined.
  • Store the granola in an airtight jar or container.

Note: Use gluten free oats if you need to keep this recipe completely gluten free.
