Avocado Chocolate Pudding Pots

Ingredients

  • 2 good sized avocados
  • 35 g cocoa powder
  • 75 ml maple syrup (or honey, if preferred)
  • 150 ml soya or rice milk
  • 1 tsp vanilla essence
  • handful marshmallows (or banana slices, if avoiding all refined sugar)
  • Small handful dark chocolate chips

Instructions

  • Cut the avocados in half, remove the stone and use a spoon to scoop the flesh from the skin. Save the skin for this fun avocado boats craft!
  • Throw the avocado flesh into a blender or food processor, then add the rest of the ingredients and whizz it all up together, until the mixture is smooth and lump free. Taste the mixture to check it is sweet enough - you can always whizz in a splash more maple syrup if you need to.
  • Tip out from the blender into a large bowl, then cover and put into the fridge for around ½ hour to thicken up a little.
  • When ready to serve, take one marshmallow for every person, and chop it in half with a clean pair of scissors. Push a dark chocolate chip, flat side up, into the cut side of each marshmallow half to make eyes.
  • Spoon the chocolate pudding into small bowls, then top each serving with a pair of marshmallow eyes.
