Today I'm sharing a fun and surprisingly healthy avocado chocolate pudding recipe. This is now also known as 'monster chocolate pudding pots' in our house, as I added some fun extra features to the traditional avocado pudding recipe when I served it up! I also made no mention of the avocado when I gave it to my boys for testing, and they did not have a clue that it was the key ingredient! This recipe is dairy free and nut free, and could easily be made vegan and free from refined sugar by replacing the marshmallows with slices of banana.
This recipe very nearly didn't make it onto the blog, as my first reaction on tasting it was a very negative one. It turns out I'm either allergic to avocado or have a severe intolerance to it, as I experienced a severe reaction to just one mouthful of the pudding, and was left doubled up in pain for quite some time after eating it! I was also hugely disappointed as it didn't taste nice at all to me, but both of my boys wolfed it down, and the (ever so slightly fussy) Mr Amazing declared it quite delicious and asked when I was going to make it again, so apart from my unfortunate reaction, it was overall a great success!
Avocado Chocolate Pudding Pots
Ingredients:
- 2 good sized avocados
- 35g cocoa powder
- 75ml maple syrup (or honey, if preferred)
- 150ml soya or rice milk
- 1 tsp vanilla essence
- handful marshmallows (or banana slices, if avoiding all refined sugar)
- Small handful dark chocolate chips
Method:
Cut the avocados in half, remove the stone and use a spoon to scoop the flesh from the skin. Save the skin for this fun avocado boats craft!
Throw the avocado flesh into a blender or food processor, then add the rest of the ingredients and whizz it all up together, until the mixture is smooth and lump free. Taste the mixture to check it is sweet enough - you can always whizz in a splash more maple syrup if you need to.
Tip out from the blender into a large bowl, then cover and put into the fridge for around ½ hour to thicken up a little.
When ready to serve, take one marshmallow for every person, and chop it in half with a clean pair of scissors. Push a dark chocolate chip, flat side up, into the cut side of each marshmallow half to make eyes.
Spoon the chocolate pudding into small bowls, then top each serving with a pair of marshmallow eyes.
I think this would be a really fun kids party food idea - with a prize for the child that guesses the secret ingredient first!

I can't imagine being allergic to avocado! I eat one everyday, i have a slight addiction! I've made avocado chocolate mousse before and LOVED it (so did my boys) so I will definitely be giving this a try!
