- 500 g watermelon flesh
- 1 large banana
- 75 g raspberries
- 200 ml soya milk
- Optional extras to decorate
- flaked almonds
- handful fresh strawberries
Chop the watermelon into bite size pieces and peel and roughly chop the banana. Line a baking tray or large plastic tub then fill with the melon, banana and raspberries and pop in the freezer to freeze for 2 hours or overnight.
Once frozen through, throw all of the fruit into a blender with the soya milk (or other milk of your choice). Blend until smooth. You may need to add a little more milk to the mixture to loosen it if your blender is struggling, but remember that it needs to be nice and thick as it's being served in a bowl.
Once smooth and lump free, spoon into bowls to serve. Decorate the top with flaked almonds and sliced strawberries or raspberries if wanted.
