Wash and gently pat dry the strawberries.

Slice the top off each strawberry to form the flat bottom of the ‘hat’.

Cut a tiny piece off of the point of each strawberry, to give the marshmallow something to stick to.

Arrange the strawberries cut-side-down on the plate or platter you plan to serve them on (I used a wooden chopping board) .

Balance a mini marshmallow on each strawberry. The little bit of moisture from the cut tip of the strawberry should hold it in place nicely.

Dust the ‘hats’ liberally with icing sugar to create a snow effect. This will also sweeten the strawberries a little, as they are often a little sharp being out of season at this time of year.

Serve immediately.
