Ingredients

  • 150 g greek yogurt
  • 2 tsp  maple syrup or honey
  • handful strawberries
  • handful raspberries
  • handful blueberries
  • 6 mini pancakes*

Instructions

  • Measure out the yoghurt into a bowl and add the maple syrup or honey. Stir until combined.
  • Wash the fruit in cold water and drain on kitchen paper. Chop the tops off the strawberries and if they are quite large, cut into smaller pieces.
  • Lay out the pancakes out on a chopping board or plate. Place a dollop of yoghurt on each pancake and swirl around with the back of a spoon to cover.
  • Top with the fruit, laying it out in pretty patterns to decorate if wanted.
  • Serve immediately.

Notes

*Notes: I used ready-made pancakes for this recipe to keep it quick and simple, but you could of course make your own. You can find a simple pancake recipe here if you'd prefer to make them from scratch.
