Easy oven baked mini pancake bites with Goats Natural Yoghurt from St Helen’s Farm - perfect for pancake day or a healthy family friendly breakfast all the year around!

Ingredients
1large egg
150gSt Helen’s Farm Goats Natural Yoghurt
1tspvanilla extract
1TbsHoney or maple syrup
150mlSt Helen’s Farm Semi-Skimmed Goats Milk
150gplain flour
1tspbaking powder
Toppings - choose from:
Blueberries
Raspberries
Dark Chocolate Chips
Banana
Instructions
Preheat oven to 180°C (Gas mark 4/350°F).
Break the egg into a large bowl and lightly whisk. Add the Goats Natural Yoghurt, vanilla extract and honey or maple syrup. Lightly whisk to combine.
Add the Goats milk and whisk again to combine. Sift in the plain flour and baking powder and whisk again, just until smooth.
Set the mixture aside to rest for 10 minutes.
Meanwhile, spray 2 mini muffin tins with oil to grease.
Spoon the pancake mixture into the mini muffin tins, filling each hole no more than ⅔ full. I got about 40 mini muffins from the mixture.
Add toppings of your choice.
Bake in the preheated oven for around 12-15 minutes, until puffed up and lightly golden.
Once cool enough to handle, remove form the tin and serve warm, with more goats yogurt, maple syrup or honey to dip them in.

Notes: Other toppings which would work well include strawberries, blackberries, milk or white chocolate chips, mini fudge pieces, a small dollop of jam or chocolate spread and even crumbled up crispy bacon!
