Ingredients

  • 1 large egg
  • 150 g St Helen’s Farm Goats Natural Yoghurt
  • 1 tsp vanilla extract
  • 1 Tbs Honey or maple syrup
  • 150 ml St Helen’s Farm Semi-Skimmed Goats Milk
  • 150 g plain flour
  • 1 tsp baking powder

Toppings - choose from:

  • Blueberries
  • Raspberries
  • Dark Chocolate Chips
  • Banana

Instructions

  • Preheat oven to 180°C (Gas mark 4/350°F).
  • Break the egg into a large bowl and lightly whisk. Add the Goats Natural Yoghurt, vanilla extract and honey or maple syrup. Lightly whisk to combine.
  • Add the Goats milk and whisk again to combine. Sift in the plain flour and baking powder and whisk again, just until smooth.
  • Set the mixture aside to rest for 10 minutes.
  • Meanwhile, spray 2 mini muffin tins with oil to grease.
  • Spoon the pancake mixture into the mini muffin tins, filling each hole no more than ⅔ full. I got about 40 mini muffins from the mixture.
  • Add toppings of your choice.
  • Bake in the preheated oven for around 12-15 minutes, until puffed up and lightly golden.
  • Once cool enough to handle, remove form the tin and serve warm, with more goats yogurt, maple syrup or honey to dip them in.

Notes

Notes: Other toppings which would work well include strawberries, blackberries, milk or white chocolate chips, mini fudge pieces, a small dollop of jam or chocolate spread and even crumbled up crispy bacon!
