Course: Lunch
Cuisine: British
Servings: 1 lunch

Ingredients

  • 2 slices seeded bread
  • 1 slice ham
  • 2 lettuce leaves
  • 1 mini Babybel cheese
  • 2 blueberries
  • 4 cherry tomatoes
  • 2 mini peppers
  • 1 apple
  • 1 mini marshmallow
  • 1 Capri-Sun Fruit Crush pouch

Instructions

  • Start by making your sandwich.  I used ham for this lunch, but you could use any filling of your choice.
  • Take the mini Babybel cheese, peel off the outer wrapper, leaving the wax on the cheese, and cut it in half so that you end up with two circles, as shown in the picture below.
  • Using a sharp knife, cut the sandwich in half at an angle as shown in the photo below.  Add a couple of lettuce leaves to the top half of the sandwich, so that they poke out of the top as 'hair'.
  • Pop the Babybel cheese onto the sandwich to form two eyes.  Add a cherry tomato nose, pushing it firmly into the bread so that it stays put. Finish off the eyes with a couple of blueberries.  You can stick them down with a dab of cream cheese or mayo if you wish, which will help to hold them in place whilst the lunch is transported.
  • Place the sandwich into your lunch box.  I used a Klip Seal 3 compartment lunch box for this lunch, but you could use any lunch box of your choice, or even a sandwich box and some snack containers.
  • Pop a couple of eye bento picks into two mini peppers to decorate and pack them in the lunch box, filling up any spaces around them with the rest of the cherry tomatoes.
  • Create eyes for the apple using a mini marshmallow and an edible marker pen.  To make the eyes, take a mini marshmallow, snip it in half with kitchen scissors as shown in the picture below, then use the edible marker pen to dot each of the eyes.  The great thing about these fun edible eyes it that they are self adhesive! The cut side of the marshmallow is sticky so you can stick them straight onto an apple (or other fruit of your choice).
  • Add your apple, complete with eyes, to the lunch box to finish your lunch.  Pack the lunch box up.
