Ingredients

  • 2 apples
  • 3 Tbsp smooth peanut butter
  • 2 Tbsp desiccated coconut
  • handful flaked almonds
  • handful raisins

Instructions

  • Slice the top and bottom from each apple, then cut the remaining apple into disks, around 1cm thick.
  • Using an apple corer, round mini bento cutter or a sharp knife, cut the centre from each apple slice.
  • Spread each apple ring with a layer of peanut butter.
  • Sprinkle over the desiccated coconut, flaked almonds and raisins to top each one.
  • Transfer to a plate and serve immediately.

Notes

Note: This recipe should be served as soon as possible after making. If you want to make them for party food where they may sit for a little while before eating, the apple slices should be dipped in cold water with a little lemon juice immediately after cutting to help prevent browning. Dry them off on a piece of kitchen paper before spreading with the peanut butter and toppings.
