Fun pumpkin shaped energy bites make a great healthy snack for kids & are full of delicious autumn flavours, including pumpkin pie spice, apples and pecans.

Ingredients
125gpecan nuts
100gdried apple rings
150graisins
1Tbspground almonds
1Tbspmaple syrup
½tspmixed spice or pumpkin pie spice
To decorate:
50gorange homemade coconut sprinkles
7whole pecan nuts
Instructions
Line a baking tray or plate with grease proof or baking paper – be sure to check that it will fit in your fridge first.
Measure out the pecan nuts and place in a food processor or high-speed blender. Blend until finely chopped.
Roughly chop the dried apple rings and add to the blender, along with the raisins, ground almonds, maple syrup and mixed spice.
Whizz everything together until smooth and well combined. You might need to scrape the sides down a few times before the mixture comes together.
Turn the mixture out into bowl, then take walnut sized pieces of the mixture and roll it into balls.
Roll each ball in the orange sprinkles to coat then place on the lined baking tray or plate.
Slice the pecans in half lengthways, then push a pecan half into the top of each energy bite to turn it into a pumpkin.
Pop into the fridge for 15 minutes or so to set, then store in an airtight container in the fridge until ready to serve.
Notes
These energy balls should last for at least 5 days, though ours tend to get eaten quickly so never survive beyond a day or two!
