Yeti No-Bake Coconut Bites

This cute yeti themed no-bake coconut bites recipe is super easy and fun to make! Celebrate new movie Smallfoot with this fun yeti-themed treat!

Ingredients

  • 75 g cashew nuts
  • 200 g desiccated coconut
  • 2 Tbsp coconut oil
  • 3 Tbsp honey

To decorate:

  • 75 g desiccated coconut
  • 24 edible candy eyes
  • 12 whole pecan nuts

Instructions

  • Place the cashew nuts in a high speed blender or food processor, along with the desiccated coconut.
  • Pop the coconut oil into a small microwave-safe bowl and heat in the microwave for 15 seconds at a time until melted.
  • Pour the coconut oil into the blender, along with the honey.
  • Whizz everything together until finely chopped and well combined.
  • Turn the mixture out into bowl, then take walnut sized pieces of the mixture, firmly press it together and roll it into balls.
  • Roll each ball in the extra desiccated coconut to coat then place on a small lined baking tray or plate.
  • Cut each pecan nut into horn-shaped slices, then push two into each ball for the Yeti horns.
  • Finish the Yetis by gently pressing 2 candy eyes into the top of each one.
  • Place in the fridge for an hour until completely chilled through and set.
