This simple pea and mint houmous is sweet and mild so perfect for kids. Serve it up with a platter of crunchy vegetables for healthy snacks or party food.

Ingredients
200gpeas - frozen or fresh
210gtin chickpeas
1garlic clove
1Tbspolive oil
2tsplemon juice
handful fresh mint leaves
salt & pepper to taste
Instructions
If using frozen peas, defrost them in the microwave or blanch them in a pan of boiling water for 1 minute, then drain immediately.
Place all of the ingredients in a blender or food processor.
Blend together until the houmous is at your required consistency - you can leave it a little chunky or whizz together until smooth.
Serve garnished with an extra drizzle of oil and a sprig of fresh mint.
Notes
Store in an airtight container in the fridge for up to 3 days.
