Ingredients
100gbutter
200gicing sugar
½tspvanilla extract
10shortbread fingers
20pretzels
5mikado sticksor matchstick chocolates
1Tbsphundreds and thousands sprinkles
Instructions
First make the buttercream icing. Whisk the butter until soft and fluffy. Sift the icing sugar into the bowl with the butter, a little at a time, whisking as you go until completely combined. Add the vanilla extract and whisk again until combined.
Spoon the buttercream icing into a piping bag with a large closed star piping tip.
Pipe a line of icing stars down the centre of each shortbread finger.
Push two pretzels into the icing on each biscuit to form butterfly wings.
Break off small lengths of mikado sticks and push two pieces into each biscuit for antennae.
Finish each butterfly with a pinch of sprinkles scattered over the top.
Notes
Notes: Try colouring the buttercream in different pastel colours before piping for colourful butterflies! If not serving straight away, finished butterfly cookies can be stored in the fridge for a couple of hours before serving if needed.
