Leftovers Bolognese Curry

Use up your leftovers with this quick and easy bolognese curry recipe - it's child friendly and great for saving time and money on family meals!

Ingredients

  • 600 g new potatoes
  • 1 Tbsp vegetable oil
  • 1 large onion
  • 2-3 Tbsp mild curry powder
  • ½ batch slow cooker bolognese
  • 200 g fresh spinach

To serve (optional):

  • rice
  • natural yogurt
  • mango chutney
  • fresh coriander leaves

Instructions

  • Wash the potatoes, then slice into halves or quarters so that they are all roughly the same size. Cook in boiling water for 8-10 minutes until they are just cooked, then drain.
  • Meanwhile, roughly chop the onion. Heat the oil in a large pan and fry the onion until starting to soften. Add the curry powder to the pan with the onion and cook for a minute or so until fragrant.
  • Stir the bolognese sauce into the pan with the onion and cook until heated through.
  • Once piping hot, roughly chop the spinach and add to the pan. Cook until the spinach is wilted, then add the cooked new potatoes and stir until everything is well combined.
  • Cook for 5 minutes, then serve with rice and optional toppings of yogurt, mango chutney and chopped coriander leaves.

Notes

Note: You could also try adding other toppings such as nuts, seeds and fresh or dried fruit.
