Inspired by the film Daddy's Home 2, these easy snickerdoodle cookies are perfect for the whole family to enjoy! Quick and easy to make, these yummy snickerdoodles take just 20 minutes to prepare and bake!

100ggolden caster sugar
30gsoft dark brown sugar
For the cinnamon coating:
Preheat your oven to 180°C (Gas mark 4/350°F). Line two large baking trays with grease-proof or baking paper
Whisk the butter, sugars and egg yolk together in a large bowl until fluffy.
Add the vanilla extract and whisk until well combined.
Add the self-raising flour, whisk until just combined, then pull together with your hands to form a dough.
Split the cookie dough mixture into 24 roughly equal pieces, (each around one flat tablespoon in size), then roll each piece into a ball.
Mix together the caster sugar and cinnamon in a small bowl.
Roll the cookie balls around in the cinnamon sugar and place on the baking tray, leaving plenty of space in between each on for spreading.
Bake the cookies for 10-12 minutes, then remove from the oven and leave the cookies on the tray to cool.
Note: Once completely cool, cookies can be stored in an airtight container for up to 3 days.
