These fun reindeer pizza quesadillas make a perfect quick and easy family meal or Christmas party food idea and they're great for using up festive leftovers too!

Ingredients
2wholemeal tortilla wraps
1Tbsred pesto
handful grated cheese*
¼red pepper
¼green pepper
To decorate (optional):
3cherry tomatoes
6black olives
12plain pretzels
Instructions
Prepare your fillings – grate the cheese, de-seed and chop the peppers.
Lay a tortilla wrap in a frying pan. Spread the pesto all over the tortilla, leaving a small gap around the edge.
Sprinkle the grated cheese over the top of the pesto. Scatter over the chopped peppers or other fillings** of your choice. Place the second tortilla on top to form a sandwich with the fillings in the middle.
Dry-fry the tortilla for a couple of minutes until the base is golden. Once the base is cooked, pop a plate on top of the pan and flip the pan over, then carefully slide the quesadilla back into the pan to cook on the other side. Cook for a few minutes more until the cheese is melted and the quesadilla cooked through.
Slide the quesadilla out of the pan and onto a chopping board and cut it into 6 wedges. Place on the plate or platter that you'll be serving it up on.
Slice the cherry tomatoes in half, and add one half to the tip of each quesadilla wedge for the reindeer noses.
Cut the olives into rings, then add two rings to each quesadilla wedge for the reindeer eyes. Place 2 pretzels on each quesadilla wedge for the reindeer antlers.
Serve immediately.
Notes
*I used a ready grated 3 cheese mix but cheddar, mozzarella or a hard goats cheese also work well. **Other suggested alternative fillings you could use include; chopped veggies – red onion, spring onion, spinach, mushrooms, cherry tomatoes, sweetcorn, peas, cooked broccoli, finely chopped cooked potato, sweet potato or squash. Cooked meat – ham, chorizo, pepperoni, leftover shredded turkey or chicken, bacon or sausage. The quesadillas can also be served cold - cool the wedges on a cooling rack after cooking and decorate just before serving.
