Ingredients

  • 2 slices white or brown bread
  • 1 Tbsp cream cheese
  • small handful homemade coconut sprinkles

Instructions

  • Stack the two slices of bread together and remove the crusts with a sharp knife (you can also leave the crusts on the sandwiches if wanted). Cut the bread into quarters.
  • Carefully separate the pieces of bread, keeping each set of quarters together.
  • Spread cream cheese over half of the bread slices and top with a generous pinch of rainbow coconut sprinkles.
  • Cut shapes into the other bread slices using mini bento cutters, then place on top of the cream cheese/sprinkle covered slices to form mini sandwiches.
  • Pack in a lunch box or serve immediately.

Notes

These fairy bread sandwiches are made with my easy homemade coconut sprinkles, but you can use ready made sprinkles instead if preferred.
