Preheat the oven to 200°C (Gas mark 6/390°F).
Scrub the potatoes in cold water then pat dry with kitchen paper. Chop each potato into 4 wedges.
Place in a roasting tin and pour over the olive oil. Give them a good stir to coat in oil. Sprinkle over cumin and paprika and stir again to coat.
Put the tin in the oven to cook for 25-30 minutes, taking out and shaking every 10 minutes to help the potatoes cook evenly.
Now that we have our Tefal Actifry (low fat air fryer) we usually use that to cook this recipe as it frees up oven space and cooks everything so beautifully evenly, but the oven method has also worked well for us many times over the years. If you have space for it, I would highly recommend an Actifry, we really love ours, especially for homemade chips, wedges and roasted vegetables!
