Traffic Light Fruit Smoothies

Fun and healthy traffic light fruit smoothie recipe made only from fresh fruit and fruit juice!

Ingredients

  • 2 kiwi fruit
  • 8 cm chunk cucumber
  • 1 mango
  • 300 g strawberries
  • fruit juice of your choice

Instructions

  • Prepare your ingredients - peel the mango and cut into small chunks, wash and hull the strawberries, then cut into quarters, peel the kiwi fruit and cut into chunks, cut the cucumber into chunks.  Lay the fruits and cucumber on baking sheets and freeze for a couple of hours, keeping the different fruits separate from each other.
  • Once frozen, blend the strawberries with a little fruit juice to form a thick smoothie.  Pour into a glass to form a layer filling just under a third of the glass. Next, blend the mangos with a little fruit juice to form a second smoothie, and layer it on top.  
  • If you are having trouble with the layering, try putting the glasses with the first layer in the freezer for half an hour to set before pouring on the second. Finally, blend the kiwi fruit, cucumber and a little fruit juice to form a third smoothie, and layer over the top as before. Serve immediately, or chill in the freezer for up to half an hour before serving.
