How to make an easy rainbow unicorn bento lunch - with full instructions and video tutorial - Eats Amazing UK.

Ingredients
  • 2 slices bread
  • butter or spread
  • 1 slice of cheese or filling of your choice
  • Mixed raw vegetable sticks (See notes)
  • Mixed fresh fruit
  • handful popcorn
  • gold chocolate coins (optional)
Instructions
  1. First cut out your unicorn sandwich using the Lunch Punch sandwich cutter. 

    (As you can see in the video above, I like to cut the pieces separately as this gives a cleaner shape. If you’re having trouble getting a good imprint, try microwaving the bread for 3-5 seconds first to soften. I also use a food pick with a rounded end to help pop the sandwich out of the cutter without breaking it.)

  2. Once you’ve made the sandwich, set it to one side while you make the rest of the lunch.

  3. Lay the rainbow veggies out in the bottom of the largest compartment in your lunch box. I arranged mine in colour order – purple carrots, red pepper sticks, orange carrots, yellow baby corn and green cucumber (see notes below for more vegetable suggestions). Place the unicorn sandwich on top.
  4. Lay the rainbow fruit out in one of the smaller lunch box compartments. I arranged mine in the following order; red grapes, strawberry slices, green grapes and blueberries.
  5. Fill another compartment with a plain popcorn ‘cloud’.
  6. Finish the lunch off with a couple of gold coin for a treat (optional).
Recipe Notes

Equipment: Lunch Punch Unicorn Sandwich Cutter  and a divided Bento Box (I used our Yumbox Panino) Notes: For the mixed vegetables I used 1 small purple carrot (sliced lengthways), 4 sticks raw red pepper, 1 small orange carrot (sliced lengthways), 1 stick of baby corn (halved) and 4 sticks of cucumber. Other vegetables that would work well for the rainbow include sugar snap peas, lighty steamed broccoli, spinach, beetroot, orange pepper, yellow pepper, sweetcorn and cherry tomatoes. For the mixed fruit I used 2-3 red grapes (halved), 1 strawberry (quartered), 2-3 green grapes (halved) and 4-5 blueberries. You could use any fresh fruit in a variety of colours to build your own rainbow.
