    Using up Leftovers in Creative Halloween Lunches

    We're on half term this week, so no need for packed lunches, but I still have some lunches from last week to share with you.  In today's post I'm sharing two Halloween themed lunches that I made using leftovers, showing that with a little bit of imagination, even bits and pieces from dinner the night before can be presented in fun and creative ways.  I am a big believer in using leftovers for lunches wherever possible - they help avoid waste, make a nice change from sandwiches and most importantly of all, make lunch packing quicker and easier than ever in the morning.

    Back to today's lunches! The first lunch I made was packed in our Yumbox Panino lunch box, and used up a spare jacket potato and some sweetcorn from dinner the night before.  I topped the jacket potato halves with some grated red Leicester cheese whilst they were still warm, and once cool, popped them into the fridge for the night so that they were ready for lunch the next day. 

    To turn the potatoes into pumpkins, I used a round cutter to make them into neat circles (the leftover 'edges' became a delicious bonus to my breakfast!) and topped them with shapes cut from a Bear yoyo (dried fruit strip) to make spooky faces.  I rested them on lettuce leaf style silicone dividers, and finished them off with a twiglet stalk and a leaf pick each. 

    On the side I packed a silicone cup full of sweetcorn, topped with a cute monster cupcake ring, a clementine, which I also turned into a pumpkin by caring a simple face from the skin, filling the gaps with more Bear yoyo shapes and adding another leaf pick.  I finished the lunch off with a few grapes, and added the remains of the bear yoyo to the treat well, topping it with a few pumpkin sprinkles (which I found in Asda).  Small Child really enjoyed this pumpkin themed lunch!

    The second Halloween lunch I'm sharing today was packed in my Laptop Lunches bento box, and I used up some leftover roast chicken breast, which I turned into mutant chicken! To make, I topped slices of roast chicken breast with a monster hand cupcake pick and glued on some edible icing eyes with a little cream cheese (you can find my easy DIY recipe for icing eyes here).

    I also packed raw carrot disks, red and green grapes, which I popped in a lettuce style silicone cup and topped with a little chocolate eyeball, mini bread sticks, a biscuit finger (from M&S) and some organic natural yoghurt, which I topped with Halloween sprinkles (bought from Asda).  Small Child added a small toy plastic rat for an extra creepy feel!
