This super easy, no bake, mini egg chocolate fridge cake recipe is perfect for Easter baking with kids!

Quick and easy mini egg chocolate fridge cake recipe - this easy no bake treat is perfect for Easter

Today I have another yummy Easter treat recipe to share with you. This amazing mini egg chocolate fridge cake is so easy to make and absolutely delicious, though I say so myself! My 7 year old made this easy no-bake recipe with very little help from me and he was rightly proud of his efforts!

Quick and easy mini egg chocolate fridge cake recipe - a great Easter dessert kids can make

Easter is a great time for a bit of baking with the kids and I've really enjoyed creating lots of new Easter recipes for you this year. Some of my favourite bakes have been my Chocolate Easter Nest Cupcakes, Easy Easter Cupcakes and bright rainbow Easter Egg Cookies - you'll find all these recipes and more in our Easter Treat Recipes section.

For a quick and easy recipe for kids though, you can't beat a no-bake chocolate fridge cake! I added an Easter spin to ours by  using mini eggs but you can make this Easter fridge cake recipe any time of year - just swap in marshmallows, dried fruit or nuts for the mini eggs for a quick and easy treat all the year around.

Easy Mini Egg Fridge Cake Recipe - this no bake chocolate fridge cake is perfect for Easter

Mini Egg Chocolate Fridge Cake

Ingredients:

  • 250g digestive biscuits
  • 200g milk chocolate
  • 100g dark chocolate
  • 100g butter
  • 150g golden syrup
  • 100g milk chocolate mini eggs
  • 100g white chocolate mini eggs

Method:

Line a small rectangular baking tray or cake tin with baking parchment.  If you don’t have any, tin foil also works.

Place the digestive biscuits in a strong freezer bag. Using a rolling pin, bash the biscuits to roughly smash them.

Break or chop the milk chocolate and dark chocolate into chunks and place in a large microwave safe bowl. Add the butter and golden syrup. 

Heat in the microwave for short bursts of around 30 seconds, stirring in between, until the chocolate has almost melted.  Be careful not to overheat or burn the chocolate.

Once the chocolate is melted, stir with a spoon until all the ingredients are fully combined and the mixture is smooth.

Pour the smashed digestive biscuits into the bowl and mix together until the biscuits are completely coated in the chocolate mixture.

Add half of the mini eggs to the bowl and mix in with the rest of the ingredients.

Tip the fridge cake mixture into your lined tin, spread it around and push it down with the back of the spoon to press it into the tin.

Scatter the remaining mini eggs on top, then carefully push them all into the fridge cake, working quickly before it sets.

Pop the tray into the fridge and leave to set for around an hour.  Once the fridge cake has set hard, take it out and cut into pieces.

Mini Egg Chocolate Fridge Cake

Easy chocolate nest Easter cupcakes recipe - fun Easter recipe for kids

This is the second of two cute Easter cupcake recipes I'm sharing with you today - the first was my Easy Easter Cupcakes recipe, and this one is for yummy chocolate cupcakes topped with chocolate buttercream nests, yum!

How to make cute and easy Easter nest chocolate cupcakes - fun Easter recipe for kids

I decorated these fun Easter nest cupcakes with homemade mini egg chicks. These are super easy to make - I shared a tutorial for them a few days ago which you can find here: Mini Egg Chicks. If you don't have the time or the inclination to make mini egg chicks - just decorate the cakes with plain mini eggs instead, they'll taste just as good!

I used a grass piping tip to create the nests on the top of my chocolate cupcakes, but if you don't have one you can use a small round 'writing' tip and just whizz round a few times extra, or failing that, make a nest pattern in your buttercream with the tip of a fork.

How to make cute and easy chocolate nest cupcakes with mini egg chicks - fun Easter recipe for kids

Easter Nest Chocolate Cupcakes

Ingredients (makes 12):

  • 175g softened butter (or dairy free spread)
  • 175g golden caster sugar
  • 3 large eggs
  • 175g self raising flour
  • 50g cocoa powder
  • 3 Tbsp milk (or dairy free alternative)
  • 2 tsp vanilla extract

To decorate:

  • 100g softened butter (or dairy free spread)
  • 200g icing sugar
  • 3 Tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1 Tbsp milk or dairy free equivalent
  • 36 Chick Mini Eggs

Method:

Preheat oven to 180°C (Gas mark 4/350°F). Line a 12 hole muffin tin with 12 muffin cases.

Place the butter or dairy free spread into a mixing bowl and whisk together with the caster sugar until light and fluffy. Break the eggs into a bowl and lightly whisk with a fork. Add the eggs a little at a time to the butter and sugar mix, whisking in between.

Sift the flour and cocoa powder on top, and using an electric whisk on a low speed, gently blend the ingredients together.  Add the milk and vanilla extract and blend again.  Increase the mixer speed and whisk for a few more seconds until well mixed.

Divide the cake mixture between the 12 cupcake cases and smooth over the tops with the back of a spoon. Bake for 20-25 minutes until risen and springy to the touch.

Once the cakes are cooked, transfer to a wire rack to cool. 

Whilst the cakes are cooling, make the chocolate buttercream icing:

Whisk the butter with an electric whisk until light and fluffy. Sift in the icing sugar and cocoa powder, a little at a time, until completely combined.

Add the vanilla extract and whisk again. Add the milk in small splashes until the icing is at the correct consistency for piping.

Using a palette knife, spread a layer of buttercream icing over the top of each cupcake.

Spoon the remaining buttercream into a piping bag with a grass piping nozzle. Pipe a nest shape around the edge of each cupcake.

Finish off each cupcake by adding 3 mini egg chicks to each nest.

How to make fun and easy Easter cupcakes - fun Easter recipe for kids

Easter is just around the corner and today I have two cute Easter cupcake recipes to share with you. These Easter bunny cupcakes are much easier than they look and they're really fun to decorate, with or without the kids!

I used a grass piping tip to create the buttercream grass on the top of the cupcakes. If you've never used one, don't be put off - this was my first attempt at using this kind of piping tip and I think they turned out great, and if I can do it, anyone can!

How to make easy Easter bunny cupcakes recipe - fun Easter baking with kids

I used Maltesers Mini Bunnies to decorate my cupcakes, in a mixture of white and milk chocolate, but you can use any small chocolate bunnies for these cakes. I also scattered Cadbury mini eggs around the top, but again, any brand of mini eggs will do!

Easy Easter Cupcakes

Preheat oven to 180°C (Gas mark 4/350°F). Line a 12 hole muffin tin with 12 muffin cases.

Place the butter or dairy free spread into a mixing bowl and whisk together with the caster sugar until light and fluffy. Break the eggs into a bowl and lightly whisk with a fork. Add the eggs a little at a time to the butter and sugar mix, whisking in between.

Spoon the buttercream into a piping bag with a grass piping nozzle. Cover the top of each cupcake with piped tufts of buttercream 'grass'.

Add a chocolate bunny to the centre of each cupcake, sitting up in the grass. You might want to add a few extra tufts of buttercream behind the bunnies to help them stay upright.

Finish off your Easter cupcakes by adding few mini eggs to the top of each cake, scattered in the grass around the bunnies.

How to make fun and easy mini egg chicks - cute Easter food for kids

Today I have a super easy Easter treat tutorial for you. These edible chicks are so easy to make and they're perfect for giving as homemade Easter gifts or for using to decorate your Easter bakes. 

All you need for these cute chick mini eggs are plain mini eggs of any type (I used white chocolate mini eggs but milk chocolate mini eggs would also work) and some edible marker pens, or cake pens as they are sometimes known.

To make the mini egg chicks, you simply need to draw chick faces on to your mini eggs - that's it! Once you've made your chicks, you can eat them as they are, pop them  in bags to give as gifts or use them to decorate your Easter cakes and bakes - you'll find lots of suggestions for using them further down this post.

Easy Mini Egg Chicks

Ingredients:

  • 240g bag white chocolate mini eggs
  • black, orange and yellow edible marker pens

Make edible chicks using mini eggs and edible marker pens - check out the tutorial

Method:

Pour the mini eggs into a bowl or plate.

Easy Mini Egg Chicks

These cute and easy mini egg chicks make a great Easter project for kids! Serve them up for a fun Easter treat of use them to decorate cakes and bakes!

  • 240 g bag white chocolate mini eggs

Quick and easy milk chocolate mini egg fudge recipe - just 4 ingredients and 5 minutes to make

Today I'm sharing a variation on one of my most popular Easter recipes - my White Chocolate Mini Egg Fudge.

My video recipe for this super easy chocolate fudge has been hugely popular over on Facebook over the last few years. but every year I got a lot of comments requesting a milk chocolate version as not everyone likes white chocolate.

My tried and tested milk chocolate fudge recipe has always worked brilliantly with a variety of fillings and toppings (see my Maltesers Chocolate Fudge and Marshmallow Chocolate Fudge), so I was pretty confident that milk chocolate mini egg fudge would work. I have to say, it really is every bit as delicious as the white chocolate version!

How to make quick and easy mini egg fudge - yummy homemade Easter gift idea

I add vanilla extract to my mini egg fudge as it compliments the subtle vanilla flavour in the shells of the Cadbury Mini Eggs I used, but you can skip the vanilla if you prefer to keep it a little more chocolatey.

Whilst I like to leave my mini eggs whole, I have had a few suggestions to chop the mini eggs before adding them to the fudge - this is a great idea and a good safer alternative if you are serving this fudge to any younger children.

Easy Milk Chocolate Mini Egg Fudge - fun Easter recipe for kids

Milk Chocolate Mini Egg Fudge

Ingredients:

  • 500g white chocolate
  • 400g tin condensed milk
  • 1 tsp vanilla extract
  • 2 x 80g bags mini eggs

Method:

Line a small rectangular baking tray or cake tin with baking parchment.  If you don’t have any, tin foil also works.

Break or chop the milk chocolate into pieces and place them all in a large microwavable bowl.  Pour over the condensed milk and mix together well.

Heat in the microwave for short bursts of around 30 seconds, stirring in between, until the chocolate has almost melted.  Be careful not to overheat or burn the chocolate.

Once the chocolate is melted, beat well with a wooden spoon until it all comes together smoothly. Add the vanilla extract and mix in well.

Scatter half of the mini eggs over the base of the tray. Tip the fudge into the tin and spread around so it is in an even layer in the tin.  Use a spatula to smooth the top down.

Scatter the remaining mini eggs on top of the fudge, then carefully push them all into the fudge, working quickly before it sets.

Pop the fudge into the fridge and leave to set for at least 2 hours or overnight.  Once the fudge has set hard, take it and cut into pieces.

Top Tips for Making Mini Egg Fudge

Can you make this chocolate fudge without a microwave? 

I get asked this a lot, and the short answer is - yes! To make this fudge on the stove top, simply follow the recipe as above, but instead of the microwave, heat the chocolate in a heat-proof glass bowl over a pan of simmering hot water until melted.

What type of chocolate should I use to make chocolate fudge?

For this recipe, I used Cadbury dairy milk chocolate with Cadbury mini eggs, mostly because I like the flavour, but you can use any brand of milk chocolate to make this fudge. A good quality cooking chocolate works very well, as it usually contains less sugar than standard chocolate so can bring the sweetness of this fudge down a notch.

Can I make this chocolate fudge with dark chocolate or white chocolate instead?

Absolutely, you can substitute the milk chocolate for dark chocolate in this recipe if preferred. For dark chocolate, keep all the ingredient quantities the same, but for white chocolate, check out my white chocolate mini egg fudge recipe as the recipe is slightly different.

What can I use instead of mini eggs? 

If you can't find mini eggs or you'd like to change this chocolate fudge recipe up a bit, you can swap out the mini eggs for any other filling of your choice. What's the best way to package up this fudge for gifts?

I like to cut my block of fudge into 6 pieces, then pop each piece into a square cellophane bag - presenting it as a block which the recipient can cut into pieces themselves. Alternatively, try cutting the fudge into bite-sized pieces and popping them into a tin, pretty cardboard box or cellophane bag.

Today I have another fun and healthy Easter recipe for you - easy Easter fruit kebabs. These cute Easter fruit skewers are made from different varieties of melon, cut into fun Easter themed shapes, and they make a great quick and easy healthy Easter dessert or snack.

Like my fun Easter fruit salad, these fruit kebabs aren't just for Easter - they'd be a great healthy party food idea for any occasion throughout the year - just cut the melon into whatever shapes would best suit your theme.

How to make quick and easy Easter Fruit Skewers - fun healthy Easter dessert for kids

I used my favourite Stix plastic skewers for these fruit kebabs (find them in the Eats Amazing Shop!), but you could also use bamboo skewers instead - be sure to use kitchen scissors to cut off any sharp tips from the bamboo skewers before serving to kids.

Easy Easter Fruit Kebabs

Ingredients:

  • ½ cantaloupe Melon
  • ½ honeydew melon
  • ⅓ medium watermelon

Equipment:

Method:

Start by cutting 1 or 2 round slices from the centre of each melon, approximately 1.5cm thick.

Using small Easter themed cookie cutters (I love the little plunger cutters I linked to above), cut Easter shapes from the melon slices.

I cut bunnies, carrots and chicks from the cantaloupe and honeydew melon, and Easter egg shapes from the watermelon.

Scoop any seeds from the remaining melon with a spoon and discard.

Using a melon baller, cut spheres from the remaining melon and pop into bowls until ready to use.

How to make Easter fruit kebabs - use a melon baller to cut ball shapes from the melons

Thread the melon balls and Easter shapes onto the plastic skewers, alternating colours and shapes to make pretty patterns.

Pop on a plate and serve immediately, or cover and store in the fridge until ready to serve.

Cute and easy Easter Cookies - these Easter Egg shortbread cookies are perfect for baking with kids

I have another cute Easter treat for you today - these easy Easter egg cookies! These simple Easter cookies are made from shortbread and have only 5 easy to find ingredients, so they're perfect for baking with the kids.

I coloured my Easter egg cookies with gel food colourings and they came out so bright and cheerful! I almost always use Wilton Gel colours for my baking projects as they are so vibrant and a few drops go a very long way. 

Fun and easy mini Easter egg cookies recipe - fun Easter recipe for kids

These cute Easter shortbread cookies would be perfect for packaging up for homemade Easter gifts, or popping into cellophane bags to give out to friends and family. 

If you'd rather not colour them, my simple shortbread recipe works just as well without the colour and they taste every bit as delicious!

Super easy Easter Egg cookies - these bright and colourful Easter cookies are perfect for Easter gifts and treats

Shortbread Easter Egg Cookies

Ingredients (makes approx. 50 mini cookies):

  • 250g unsalted butter
  • 125g golden caster sugar
  • 2 tsp vanilla extract
  • 375g plain flour
  • gel food colourings of your choice

Method: 

Preheat the oven to 160°C (Gas mark 2/325°F). Line 2 baking trays with baking paper.

Pop the butter, sugar and vanilla extract into a large mixing bowl, then whisk together with an electric whisk until pale and fluffy.

Sieve in the flour.  Whisk again until the mixture comes together to form a dough (You may need to pull the dough together with your hands as it's quite crumbly).

Divide the dough into 3 or 4 pieces, then colour each piece with a different gel food colouring of your choice - kneading the colour into the dough until evenly coloured. I used purple, pink, yellow and green for my cookies.

Roll one of the coloured doughes out on a lightly floured surface to around 1cm thick.  Using a cookie cutter, cut egg shapes from the dough. I used a small Easter egg themed plunger cutter which also presses a pretty design on the surface of the cookies.

Repeat with the remaining coloured doughs until you have an assortment of coloured Easter egg cookies.

How to make cute and easy Easter Egg Cookies - step 2 bake

Carefully transfer the cookies to the baking trays, then bake for around 12-15 minutes until the edges are just starting to brown.

After removing from the oven, leave the cookies to cool on the baking trays for at least 10 minutes before transferring to a cooling rack to finish cooling. Be careful as these cookies are very soft and crumbly whilst still warm.

Once completely cool, package up the cookies in cellophane bags for gifts or store the cookies in an airtight container until ready to serve.

I've got some yummy Easter treats in store, including a much-requested variation on my White Chocolate Mini Eggs Fudge, but before I get too carried away with all the chocolate based Easter recipes, I thought I'd start with a healthy Easter dessert - this cute and easy Easter fruit salad!

How to make a fun and healthy Easter dessert - Easter fruit salad recipe with melon shapes

This deliciously easy fruit salad has a super simple orange juice and honey dressing which would be delicious at any time of year, but I've made it extra special for Easter with the addition of some cute Easter themed melon shapes.

The great thing about this recipe is that it can be easily adapted to suit any occasion and would be great for healthy party food for kids - just use cookie cutters to cut the melon into any shape to suit your theme!

Easy Easter Fruit Salad

Ingredients (serves 4):

  • 200g green grapes
  • 200g red grapes
  • 150g blueberries
  • 150g strawberries
  • 1 Tbsp orange juice
  • 2 tsp honey or maple syrup
  • 1 thin slice watermelon
  • 1 thin slice honeydew melon
  • 1 thin slice cantaloupe melon

Method:

Wash and slice the grapes lengthways, then place in a large bowl with the blueberries.

Cut and discard the tops from the strawberries, then cut the strawberries into quarters and add to the bowl.

In a  separate small bowl, whisk together the orange juice and honey (or maple syrup) until well combined.

Pour the juice and syrup mixture over the bowl of fruit, then gently mix it all together with a large spoon until the fruit is completely coated in the dressing.

Using Easter themed cookie cutters, cut shapes from the melon slices.

Divide the fruit salad between 4 small bowls.

Top each bowl with the melon shapes to decorate.

Ingredients

What I found interesting about the veggie bites was that the different flavour combinations appealed differently to different members of the family, with my seven year old loving the carrot ones, my twelve year old loving the beetroot ones (which have a definite hint of chocolate orange!) and my favourite being the pumpkin ones. The veggie bites have a softer chewier texture than the veggie sticks, and come in resealable pouches, so they are perfect for nibbling on throughout the day.

Back to today's recipe - my carrot cake porridge makes a great vegan breakfast - use a dairy free milk (almond milk is my favourite for porridge) and maple syrup to keep it vegan. You can of course use any milk of your choice to make it though - my kids prefer whole cows milk for their porridge and that also works well for this recipe.

Quick and easy microwave carrot cake porridge recipe - delicious and healthy vegan porridge recipe

Carrot Cake Porridge

Ingredients (serves 2):

  • 1 medium carrot
  • 1 small apple
  • 100g oats
  • 1 tsp mixed spice
  • ½ tsp cinnamon
  • 350ml milk (or dairy free alternative)

To serve:

  • 1 Tbsp maple syrup or honey (optional)
  • 1 ZENB Carrot Veggie Stick

Quick and easy Carrot Cake Porridge Recipe - Ingredients

Method:

Wash the apple and scrub the carrot under cold running water. 

Grate the carrot and apple, leaving the skin on both.  Mix the grated carrot and apple in a large microwave safe bowl, along with the oats and spices.

Add the milk and stir well to combine.

Cook on high in the microwave for 3 minutes.

Remove from the microwave and stir again then place back in the microwave.

Continue to cook at 1 minute intervals, stirring in between, until the porridge is at your desired consistency.

Divide the porridge between two bowls, then drizzle with the maple syrup or honey if using.

Teeny tiny mini pancake cereal recipe - fun breakfast idea for kids

Today is pancake day and to celebrate I have a really fun recipe to share with you! I first spotted mini pancake cereal popping up all over Instagram last year, after it was a viral TikTok sensation (talking of TikTok, I've started posting my own videos there, so if you're a TikTok user, go follow me - user name @eatsamazing!).

I've finally got around to trying my out my own pancake cereal recipe, just in time for pancake day!

So what is pancake cereal? It's simple really - lots of teeny tiny mini American-style pancakes served up in a cereal bowl, for a fun alternative to full-sized pancakes. 

And how do you eat Pancake cereal? Pancake cereal is delicious served with a generous drizzle of maple syrup, and is also great with fresh berries and other fruit, or a dollop of Greek yogurt. You could even serve it with a scoop of ice cream on top for a fun pancake themed dessert!

How to make easy pancake cereal - fun breakfast idea for kids

Making pancake cereal is really easy. It takes a little time, but it's so much fun and worth the effort for a special occasion. To make it, whip up a batch of your favourite American style pancake batter, then drop tiny circles of batter into a frying pan and cook as usual.

Tip the cooked pancakes into a bowl and repeat until you have as much pancake cereal as you need. You'll find the full recipe below, I hope you enjoy it!

How to make easy mini pancake cereal - fun breakfast recipe for kids

Mini Pancake Cereal

Ingredients (serves 2-3):

  • 1 large egg
  • 125ml milk (or dairy free alternative)
  • 2 Tbsp vegetable oil
  • 2 Tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 140g self-raising flour
  • 1 tsp baking powder
  • pinch salt
  • butter or dairy free spread for frying

Method:

Lightly whisk the egg then mix with the milk, oil, honey and vanilla extract.

In a separate large bowl, measure out the flour and baking powder and sift into a bowl along with the salt.

Mix the wet and dry ingredients together then lightly whisk until well combined and lump free.

Spoon the pancake mix into a sauce bottle or piping bag then leave to rest for 5 minutes while you heat up the pan (If you don’t have a sauce bottle or piping bag, just leave the mixture to rest in the bowl and use a teaspoon to make the pancakes instead).

Heat the pan over a medium heat, then drop in the butter and swirl around until completely melted.

Drop mini circles of pancake mixture in the pan to make your pancakes, making sure you leave enough room between the pancakes to flip them over once ready. I find that using a pallet knife instead of a spatula makes it much easier to flip these tiny pancakes.

Cook the pancakes until they start to bubble up, then flip them over and cook on the other side until golden.

Remove from the pan, place in and repeat until all the mixture is used up.

Divide between cereal bowls and serve with a drizzle of maple syrup. Fresh berries and yogurt also go beautifully with this cute pancake cereal!
