Earlier this week I shared the first of several new bagel recipes commissioned by New York Bakery Co to celebrate the launch of their new Cheese Bagels. The first recipe was for my super easy breakfast bagel quiche, and today I have another delicious bagel recipe to share with you, this time for child friendly Bagel Nachos!

I've made bagel chips before (they are especially good for using up rare leftover bagels that are past their best - no waste!) so it seemed a natural progression to turn them into nachos. I kept the recipe simple, mild and child friendly but if you're serving them just to adults, feel free to add a handul of zingy jalapeño chillies to the dish along with the cheese!
This is fast becoming one of my favourite ways to eat the new cheese bagels from New York Bakery Co - the cheesy bagels are absolutely perfect for this recipe. Though the bagels are perfect on their own (lightly toasted with a slather of butter is a taste of pure heaven in my opinion!) this is a really fun way to make them extra special. Whether you serve them at a party of a special family meal, you can guarantee that these cheesy bagel nachos won't last more than a minute or two!
Cheesy Bagel Nachos
Ingredients:
- 3 New York Bakery Co Cheese Bagels
- 2 tbs olive oil
- 1 tsp garlic granules
- 125g grated mozarella & cheddar cheese
To serve:
- sour cream
- guacamole
- salsa
Method:
Preheat the oven to 165°C/325°F/Gas Mark 3.
Slice the bagels into bite-sized rounds, taking care to keep to cut them all to an even thickness.
Pop all the bagel pieces into a bowl, then drizzle with the olive oil, sprinkle with the garlic granules and toss to coat.
Tip them out onto a large baking tray (or two smaller trays if necessary) and spread out into a single layer.
Bake for 15-20 minutes, turning half way through, until golden and crispy.
Transfer the bagel chips to an oven proof baking dish, and sprinkle the cheese all over.
Turn the oven up to 200°C (Gas mark 6/390°F) and bake for another 5-10 minutes until the cheese is melted and bubbling.
Serve immediately with the dips on the side.
