Today I'm sharing a fun and delicious breakfast recipe that's perfect for the kids (and adults too!) this Halloween.
So much of the focus at Halloween seems to be on sweets and chocolate, but there are plenty of ways to make fun food frightfully healthy too, and these 'boo'nana parfaits fit the bill perfectly!
I used Os cereal from Nature's Path to make these breakfast parfaits. This cereal is organic and gluten free so this recipe is allergy friendly and ideal for coeliacs or anyone following a gluten free diet.
We were sent some Os to try and I have to say, I'm really impressed with them. The ingredients list is refreshingly short and only has recognisable real food ingredients, and though it does have added sugar, there's a lot less of it than you'll find in comparable brands.
I tested the Os on my boys without telling them anything about it and they absolutely loved it. My 8 year old actually came out to the kitchen and asked 'what was that cereal Mum? It was so yummy!' so I'd definitely call that a success!
This recipe is a lovely simple one so you can even let the kids loose in the kitchen to make their own. If you want to keep the kitchen chaos contained, try laying out the ingredients in bowls on the table and letting everyone assemble theirs how they wish. It adds an extra element of fun to breakfast and would be a fun half term activity for those of you on holiday this week.
The eyes are entirely optional, but in the run-up to Halloween add an extra fun spooky touch!
Spooky Banana Breakfast Parfait
Ingredients (makes 1):
- 100g Greek yogurt
- 1 tbs desiccated coconut + extra to garnish.
- honey or maple syrup to taste
- 1 small or ½ large banana
- 20g Nature's Path Os cereal
To decorate (optional):
- googly eyes
- glue stick
Method:
Start by decorating your serving jar.* Glue googly eyes onto the jar in pairs, scattered all over the outside of the jar.
Once your jar is prepared and ready to use, it's time to assemble your parfait.
In a small bowl, measure out the Greek yogurt and desiccated coconut. Stir together, than add a little honey to taste for extra sweetness if wanted and stir again until completely combined.
Peel and slice your banana into bite-sized slices.
Place ½ of the Os into the bottom of the jar, top with half of the banana slices and carefully dollop on ½ of the yogurt mixture.
Repeat with the rest of the ingredients, layering the Os, banana and yogurt mixture again. Sprinkle over a little more desiccated coconut and serve immediately.

*NOTES: I served up our parfaits in old jam jars, which I soaked in hot water to remove labels then washed thoroughly before decorating. You could also serve this recipe in a glass or sundae glass if you don't have any jars.
This recipe works well with other fruits too - try chopped kiwi, pineapple, strawberries, raspberries or blueberries in the place of the banana.
For a dairy free version of this recipe, simply replace the Greek yogurt with a dairy-free alternative of your choice.
